So here are the tasting notes for the 2015 Shui Xian via @zhaozhoutea : the first infusion was really fruity bold and a bit citrusy sour, very high fragrance and nice body. Even though the roast is present in the smell it doesn’t come out in the taste as much. The later infusions got a bit less of the fruitiness and are more dry in the finish! Definetly a very powerful tea which changes with the infusions. . Next to Rou Gui and Da Hong Pao, Shui Xian is the most popular cultivar and often found in the west. Sitting at my friend's tea table, I will use his pottery cup, drink tea, chat about life and creation for a short period of time, and talk about pottery. In fact, Jingdezhen is a very creative city. Jingdezhen ceramics has gone through more than a thousand years, including white porcelain, blue and white, glazed red, etc. Every change is a combination of craftsmen's creativity in various links, such as shape polishing, glazing method, firing temperature, and so on. April continues on a grey and rainy theme, and there doesn’t seem to be an end in sight. I know it’s best for all the green things but I’m craving a bit of sun and spring freshness. I dipped into a super fresh shi feng long jing, (it’s a pre-Qing Ming festival tea) from @masters_teas to brighten this dreary afternoon. The dry leaves smell sweet, reminding me of ripe lychees, and vegetal asparagus. Fresh, bright, and green. The brewed tea brings that asparagus flavor front and center, along with the mellow sweetness of roasted chestnuts. Delicious! The sun will be out soon, right?
