Pancakes are for the weekend and pancakes are definitely for EASTER WEEKEND. I honestly can’t remember the last time I had a traditional pancake because I simply don’t miss them. 1 mashed banana, 1 egg & 1/3 cup of oat flour is how I make my batter. Throw in lots of cinnamon or pumpkin pie spice to make them extra special. ✨

“I only lost 1kg in the past 2 weeks”

Perspective.

I said and thought the exact same things when I was 123kg(272lbs). I don’t know what it was. Me being naive, or just really wanted to believe that it would work, but either way I was always sucked into the diets that promised you X amount of weight loss in a certain amount of time, or like rock hard abs in 60 days.

So every diet I’d go on back then, if I had only lost 1-2 kg in 1-2 weeks I’d already go down the trail of “ahh this isn’t working, at this rate I’m not gonna get abs in 60 days.”

And I was right. There was no way I was gonna get abs in 60 days.

But what I didn’t see was that, if I had continued to go at that pace of roughly losing 1kg in 2 weeks, over a year I would have lost 26kg. Obviously the condition being i had to keep up with whatever it was I was doing to keep up that 1kg in 2 weeks rate.

“I’ve only lost 1kg in the past 3 weeks, I don’t know what I’m doing wrong.”

That’s one of the top 5 messages I get everyday. Not in those exact words, but similar. My reply is always the same:

Nothing is wrong. Keep it up!

1kg in 3 weeks means 17kg in a year if you keep it up consistently. That’s 34kg in 2 years.

One of the biggest changes throughout my weight loss journey has been my mindset. I tend to think in months & years instead of days & weeks.

The perspective, it helps. It helps show you what’s possible at the current rate you’re going.

I think often times if you look at it in the short term it’ll feel like the slowest progress ever. But look at it in the long term, the finish line is right there waiting for you.

No added sugar and made with coconut flour - I loved how this turned out! Super nutty and delicious✨

▪️3 Bananas, mashed▪️1/2 Cup Coconut Flour▪️1 tsp Baking Soda▪️1/2 tsp Baking Powder▪️1 tsp Cinnamon▪️3 Eggs▪️2 Tbs Coconut Oil, melted▪️2 tsp Vanilla Extract▪️

1️⃣ Preheat oven to 350°F and line a loaf pan with parchment paper (I also spray with nonstick)
2️⃣ Combine bananas, coconut flour, baking soda, baking powder, cinnamon, eggs, coconut oil and vanilla extract
3️⃣ Pour the batter into the loaf pan; option to top with banana slices
4️⃣ Bake for 35 minutes (or until a toothpick comes out clean) and then let rest for 5-10 minutes before serving

10 minute prep time + 35 minute cook time
