I eat whatever kind of rice I like best and that happens to be basmati Food should be enjoyed, and you don’t have to pick the one with the most nutritional benefit each time
~CREAMY LEMON TRUFFLE TAHINI BUCATINI (vegan)~
Tahini bucatiniiiiii--I could say that all day My plant-based take on a classic carbonara right here and it comes together in about 20 minutes This has to be one of the BEST pasta dishes I've made in a long time Pasta may very well be my favorite food and I'm always testing innovative ways to make it. While this recipe is a "creamy sauce," the lemon and peas cut through the richness perfectly, making it not too heavy I think I've shared this tip 100 times but it physically pains me when I watch people throw all of their pasta water down the drain♂️ It's liquid gold! The starchy pasta water helps emulsify your sauce and adhere to your pasta--always save some Definitely give this recipe a try, it's perfect for summer ☀️

Ingredients
8-10 oz. buccatini pasta (can also use fettuccini/spaghetti etc…)
Fresh or frozen peas
1 lemon, zested and juiced
1/4 cup + 2 tbsp tahini (I used @soomfoods )
3 cloves of garlic
3 heaping tbsp nutritional yeast
1/2 tsp dijon mustard
1 cup reserved pasta water
Salt and pepper to taste
Truffle oil for garnish

Directions
Bring large pot of water to a boil and season liberally with salt. Once boiling , add buccatini and cook according to directions. In the meantime, add lemon juice, tahini, garlic, nutritional yeast, dijon, salt and pepper, and 1/2 cup pasta water to a food processor. Pulse until desired consistency is reached (should be creamy and not too thick; I used about 3/4 cup pasta water). Drain Pasta and add frozen peas to pot to heat through. Then remove from heat, add in pasta, toss with sauce adding a little more pasta water if it is too thick. Garnish with a drizzle of truffle oil, lemon zest, and fresh cracked pepper and enjoy!
No idea what to make for lunch today? Why not make a fresh salad? This one is all vegan, gluten- and grain free and consists of organic lambs lettuce, broccoli, apricots and lots of berries. Oh and also pecans. My best friend had a big birthday recently and as a present I am making her a big meal and will bring all the food to her house today. Drinks are also involved. Yay.
