This simple herby + lemony lentil salad was the unexpected win of the week! I had zero desire to cook yesterday but with a busy week ahead, I knew I needed to do a liiiiittle planning and prep to take care of my future self.

Enter the easiest lentil salad of all time . It took maybe 10-15 minutes to assemble a big batch of this nutrient dense lentil salad and now I don’t have to think about lunches for a few days

Ingredients
• 18 ounces cooked lentils (I bought them pre-steamed which eliminated this cooking step)
• 1 large English cucumber, diced
• 1 bunch of radishes, halved and then thinly sliced
• 1/4 red onion, finely diced
• 1 head of cilantro, roughly chopped (parsley would also work great if you’re a cilantro hater)
• 1 small carton of cherry tomatoes, halved
• 1 large clove of garlic, minced
• 1/4 cup olive oil
• Juice of 1 large lemon
• Salt & pepper to taste

Directions
Mix all ingredients together in a large bowl. Enjoy!

I’ve been really hungry last couple of days and The first thing I’ve done when I have hakf an hour at home was this huge omelette.
Long distance running and all the walking during the day, taking flight after flight have made me quite tired. I’ve read stuff about how training too much might actually be the reason to get fat such as this:
“Overtraining is when you perform more training than your body can recover from. Once you start putting undue stress on your body, you stimulate cortisol, that in turn raises insulin and leptin levels causing fat gain and hunger and craving cycles.”
Still, being a stubborn fool that I am, I can’t help but challenge myself a bit too much at the times. That’s probably one of the main reasons I haven’t been able to reduce my fat % for a long time. Not despite the training that I do on a regular basis, but because of that training. Sometimes you’ve got to be smart and train less. ♀️

Ingredients:
- @drpraegers California veggie burger—always a favorite
- @udisglutenfree hamburger buns
- lettuce
- onion
- tomato
- ketchup & mustard ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
Directions:
- heat a skillet with olive oil over low-medium heat, add the veggie burger and cook on each side for 3-5 minutes
- meanwhile toast the hamburger bun and cut the onion and tomato into slices
- add ketchup and mustard to the bun, then add the veggie burger, tomato, lettuce, and onion

INGREDIENTES: [para 3 platos] 1 calabaza, cantidad necesaria de harina de avena (aprox 1 taza) y condimentos
✔️la harina de avena la logras procesando la avena en hojuelas
.
PROCEDIMIENTO:
Hervir la calabaza, pelarla y procesarla con condimentos a gusto.
Agregar la avena y formar la masa (agregar mas avena en caso que sea necesario para lograr una mejor consistencia).
Dividir la masa en distintos bollitos, envolverlos por separado con papel film y llevarlos al freezer por unos 15 minutos.
Pasados esos minutos, estirar cada bollito formando ‘un cilindro’ y cortarlos en trozos de unos 2 cm aproximadamente.
Hervir agua en una olla e ir tirando los ñoquis, una vez que suben a la superficie ir sacandolos.
