This week’s meal prep brought to you by coffee. ☕️ Definitely feeling tired after running yesterday morning and dancing all night last night. We had so much fun at the wedding and enjoyed feeling fancy with our hotel stay. Plus I stayed up past midnight so that was a win in itself. . Keeping it super simple this week as usual. Having meals 1-4 ready to go and extra healthy snacks make it easy for me to stay on track and be able to reach my goals! ☀️ . Here’s my menu for the week: M1: chocolate cherry or blueberry cauliflower smoothies M2: cherry walnut mini muffins M3: mixed green superfood salad & M4: peapods/celery & hummus or TIU bar M5: grilled chicken salads, summer avo tacos & Caribbean quinoa bowls with various lean proteins . I’ve got extra fruit & veggies cut for snacking when I’m ravenous and looking for something to put in my mouth. And don’t be fooled I have a massive sweet tooth and usually have some form of small dessert whether it’s a @yasso bar or Greek yogurt & berries. ❤️ Follow Me For More❤️☺️ Buffalo Chicken Salad Ingredients  1 1/2 lbs Chicken Breasts cut into bite-sized pieces  2 Garlic Cloves minced  2 Tbsp Sesame Oil  1 lb Green Beans ends trimmed  6-8 Chillies dried or fresh, to taste  2 Cups Cooked Brown Rice optional For the Stir Fry sauce:  1/4 Cup Low Sodium Soy sauce or coconut aminos  2 Tbsp Hoisin Sauce  1 1/2 Tbsp Chili Paste  1 Tbsp Raw Honey  Salt and Pepper, to taste  2 Tbsp Chopped Roasted Peanuts to garnish  2 Tbsp Sliced Green Onions Instructions In a small bowl add all stir fry sauce ingredients and whisk to combine. Heat 1 tablespoon of sesame oil skillet or wok over medium/high heat. Add in chicken, garlic and sauté for about 5 minutes, or until chicken is almost done. Set aside. Add the remaining sesame oil in the pan and stir in green beans and chilies. Stir fry for about 5-6 minutes or until crisp-tender. Add in the chicken and the sauce and continue to cook for about 3-4 minutes more, or until the chicken is cooked all the way through. Garnish with chopped peanuts and green onions. Serve with cooked brown rice and enjoy! Recipe Notes Options: Calories include brown rice. The calories per serving without the brown rice will come down to about 398 kcal. APPLE CINNAMON PROTEIN BAKED OATS i know it gives off more of a fall vibe but im always down for an apple cinnamon combo no matter the season! This recipe is easy to make a great for a large brunch party - I get to have my favorite breakfast (oats) in what seems like cake form and is high in protein. So it’s a win, win...WIN! - - INGREDIENTS • 1.5 cup of rolled oats • 2 scoops of @drinkorgain vegan vanilla protein powder • 2 egg whites • 1 whole egg • 1/4 cup of raw walnuts • 1/2 cup cashew milk (or your choice of milk) • 1 large honey crisp apple diced • cinnamon • 2 tbsp honey (or to taste) • 2 tbsp melted coconut oil • 2 tsp baking powder - OPTIONAL INGREDIENTS (to boost nutrient density) • 3 tbsp of hemp seeds • 2 tbsp flax meal - - Place into either a lined or oiled baking dish and bake at 375 F for 25 mins! - - You can definitely switch out the apples for different fruit flavors like blueberry, peach, or even banana

The London Marathon ‍♀️ - You’ve done me again; and I’ll see you again next year. - I went through half EXACTLY as planned; 1:29 and was feeling fairly easy and strong (although not as good as half my training runs, which was disappointing). Unfortunately, the next gel I took was immediately rejected by my stomach and I fought debilitating cramps for the rest of the run. I am proud to have pushed on even after stopping, one of my weaknesses as a runner is giving up if things go wrong. I’m proud to have increased my speed again - to something reasonable - despite walking a few times. And I’m proud to take 16 minutes off my PB and run a sub 3:15. - Now to talk hubs into letting me do an autumn marathon...

Via @gimmedelicious ~ INGREDIENTS 1 pound chicken breasts cut into 1'' pieces 2 tablespoons olive oil 1 teaspoon Italian seasoning 1/4 teaspoon crushed pepper optional salt and pepper to taste 3-4 cloves garlic minced 1/2 cup tomatoes chopped 2 cups broccoli florets 2 cups baby spinach 1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese 4 oz cream cheese ~ INSTRUCTIONS Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through. Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese.
