Chicken Fajita Kebabs

Chicken pieces are soaked in a bright, citrusy, well season marinade then threaded onto skewers along with fresh bell peppers and onions. Then they're grilled over hot flames to give them that fire kissed flavor we all crave! Such a fun twist on the classic chicken fajitas.

Ingredients:
2 tsp lime zest
3 Tbsp fresh lime juice
3 Tbsp orange juice (mandarin or navel)
3 Tbsp olive oil, plus more for brushing grill
1 Tbsp minced garlic (3 cloves)
1 tsp packed brown sugar
2 tsp chili powder (preferably 1 tsp regular 1 tsp ancho)
2 tsp ground cumin
2 tsp minced canned chipotle pepper, or more to taste (about 1 pepper)
3 Tbsp minced fresh cilantro, plus more for garnish
1 tsp salt
3/4 tsp freshly ground black pepper
1 3/4 lbs boneless skinless chicken breasts, diced into 1 1/4-inch pieces
1 large yellow onion peeled and diced into 1-inch chunks
3 bell peppers (preferably 1 red, 1 yellow, 1 green), cored and diced into 1-inch pieces

Instructions:
If using wooden skewers soak in water overnight or at least 1 hour.
In a mixing bowl whisk together lime zest, lime juice, orange juice, olive oil, garlic, brown sugar, chili powder, cumin, chipotle pepper, cilantro, salt and pepper.
Place chicken in a gallon size resealable bag then pour marinade mixture over chicken.
Seal bag while pressing out excess air, rub marinade over chicken and transfer to refrigerator.
Let marinate at least 1 hour and up to 6 hours.
Preheat grill over medium-high heat to 400 degrees.
Thread chicken and peppers onto skewers (similar to the pattern pictured). Brush grill grates with oil the place skewers on grill and grill until center registers 165, about 6 minutes per side.
Serve warm garnished with cilantro. I recommend serving over quinoa or cilantro lime rice or serve in warmed tortillas.

The Creamy Horseradish Dressing is perfect as a dressing or served on the side as a dipping sauce with vegetables. Gooey eggs, pepperoncini, and avocado take it to the next level. Plus, of course, my Marinated Onions.
2: Salmon Plate: Start with salmon or any fish you love, cut into large fingers. Sear for about three minutes or so a side. Here I’ve added blanched green beans, sweet potato crisps, pear tomatoes, and slices of cucumbers. I love this time of year with the hint of spring, and it makes me want to eat all kinds of green vegetables. Remember, a salad is only as good as your ingredients, which is why I like to cook with local and in season. This is topped off with my Marinated Red Onions.
3: Quick Crab Cobb Salad: Bacon, hunks of avocado, cucumber, small pear tomatoes, tossed in a mandarin orange vinaigrette. Pick up your seafood from the fish store or grocery store, and while the bacon is cooking make your simple vinaigrette and cut your vegetables. As the bacon comes out of the oven, assemble your salad and drizzle with my delicious vinaigrette. So simple, so delicious, so soul satisfying. Keep it Whole30 or take it up a notch and add some sheep’s milk feta: delish!
4: Shrimp Platter: Marinated shrimp, sweet potato crisps, gorgeous Greens, all kinds of crunchy goodness and of course my Marinated Red Onions, will make you want to eat this salad on repeat pretty much everyday!

The Best Healthy Brownies✨

Ingredients:
▪️1 Cup Mashed Banana (~3 Bananas)
▪️1/4 Cup Coconut Sugar
▪️3 Tbs Melted Coconut Oil (or Butter)
▪️2 Tbs Milk
▪️1 Large Egg
▪️1 tsp Vanilla Extract
▪️3/4 Cup Flour
▪️1/2 tsp Baking Soda
▪️1/4 tsp Salt
▪️1/4 Cup Dark Chocolate Chips
▪️1/2 Cup Cocoa Powder▪️
Instructions
1️⃣ Preheat oven to 350°F
2️⃣ Spray an 8x8 pan with nonstick spray
3️⃣ Mash bananas in a bowl, make sure you have one cup
4️⃣ Add coconut sugar, coconut oil (or butter), milk, egg and vanilla extract
5️⃣ In a separate bowl, combine flour, baking soda, salt, cocoa powder and half the chocolate chips
6️⃣ Mix dry ingredients with wet and spread batter into the baking pan, sprinkle remaining chocolate chips on top
7️⃣ Bake for 20 minutes or until a toothpick inserted into the center comes out clean

▶️INGREDIENTS
1 15 oz can chickpeas 425 g, 1 ½ cup soaked chickpeas if starting from dry, drained and rinsed
1 Tbsp olive oil 15 mL
1 Tbsp paprika* 7 g
1 tsp ground black pepper 3 g
1/2 tsp cayenne pepper 1.5 g
1/4 tsp salt 1.5 g
4 pita flatbreads
1 cup tzatziki (click for recipe) 250 g, use ⅓ recipe if you’re just making it for these gyros
1/4 red onion cut into strips
2 lettuce leaves roughly chopped
1 tomato sliced
▶️INSTRUCTIONS
Prep: Preheat oven to 400 degrees F (204 C). Pat dry chickpeas with paper towel, removing any skins that may come off. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.
Roast: Spread chickpeas onto a greased rimmed baking sheet and roast for about 20 minutes, until lightly browned but not hard.
Assemble: Spread some tzatziki onto one side of the pita, then sprinkle in ¼ of the chickpeas and add veggies. Fold in half and enjoy!
