Bulgogi Japchae

I finally came up with THE MOST EFFICIENT WAY of making Bulgogi Japchae in the pressure cooker!
.
Forget about placing the dry 당면(noodles) in water prior to making this dish.
.
If you really want different texture for the veggies, set aside some spinach, onions, carrots and bell pepper to sauté at the end...but it’s all personal preference.
.
Here’s my 2 minute 잡채 (Japchae).
.
Ingredients:
2 lbs Bulgogi (use 1 lb for the pressure cooker and cook 1 lb on the stove.
1 medium carrot
8 white mushrooms
1 red bell pepper
1/2 large onion
1 bunch spinach
3.5 ounce sweet potato glass noodles
Sesame seeds
.
Bulgogi marinade:
2 pound bulgogi meat
1/2 large Korean pear (grated)
1/2 medium onion (grated)
3/4 cup soy sauce
1/2 cup Mirin
3 tablespoon white sugar
2 tablespoon minced garlic
1/4 teaspoon black pepper
.
Set aside 1/4 cup soy sauce and 1/2 TB sugar to add at the end before cooking the japchae.
.
Directions:
1. Marinade bulgogi. Use a food processor or a coarse cheese grater to grate the pear and onion.
Whisk the grated pear, grated onion, soy sauce, mirin, sugar, garlic and black pepper.
Once marinade is incorporated, add bulgogi meat and marinate the meat.
.
2.Set aside one pound of bulgogi to cook on the stove top. Feel free to add onion, green onion and some carrots when cooking the bulgogi on the stove. (Refrigerate the stove top bulgogi marinade).
.
3.Prepare vegetables:
Julienne carrot
Slice mushrooms
Cut red bell pepper into strips removing any white membranes
Slice onion into thin slices
Wash spinach
.
4.Place one pound of bulgogi into the inner pot to cover the base of the pot. Add 1/2 the mushrooms and 1/2 the bunch of spinach.
.
5.Add dry sweet potato noodles. Do not stack all the noodles in one directions, split the noodles in half and lay them perpendicular to each other. Then cover the noodles with the remaining spinach.
.
6.Add carrots, red bell pepper and onions. Drizzle 1/4 cup of soy sauce and ½ TB of sugar on top.
.
7Press Manual for 2 minutes followed by a quick release. Press cancel. Mix the meat, veggies and noodles. Remove everything from the inner pot and strain. Sprinkle sesame seeds on top.

Instant Pot Bangers & Mash (Low-Carb, Paleo, Whole30)
16 ounces bangers aka sausages
1 onion, sliced
2 tsp oil (for IP)
2 cups low-sodium beef broth
1 tsp thyme
1/2 tsp salt
1/2 tsp garlic powder
Slurry: 3 tbsp @bobsredmill Arrowroot flour, 6 tbsp water
Instant Pot - Set Instant Pot to the high saute setting. Heat oil. Add sausage and brown on each side, 3-5 minutes. Remove sausage from IP. You might have to brown them in batches. Add onion and saute a few minutes until soft. Add the beef broth, and using a wooden spoon, scrape the bottom of the Instant Pot to remove any bits that stuck to it. Make sure you scrape it well to avoid burning during cooking. Stir in thyme, salt, pepper, and garlic powder. Close and seal vent. Select manual setting and set time for 5 minutes. Quick-release pressure when cook time is completed. Add trivet and cauliflower in steamer. Can additional 3 minutes on high pressure, quick release pressure when done. *If you’re not cooking the cauliflower in the pressure cooker, set the time for 8 minutes on high pressure & quick release.** Remove sausages and cauliflower from pressure cooker. In a small bowl mix together slurry.

I saw this fantastic demonstration on my friend Renae’s page at @thefeatherednester (she has awesome recipe demo’s on her stories often!) so I have made it several times and we all love it! Such a great, easy meal! I paired it with brown rice and steamed broccoli and it was a delicious dinner! The chicken was SO tender and yummy! .

INGREDIENTS:
*3/4 cup ketchup
*1 cup crushed pineapple
*3 Tablespoons packed brown sugar
*1/3 cup soy sauce
*1 clove minced garlic
*juice from one lime
*8-10 boneless skinless chicken thighs, frozen (about 2.5 pounds)
*2 Tablespoons cornstarch for thickening
*1/4 cup water
*optional, green onions and sesame seeds for garnish .

DIRECTIONS:
1. Add ketchup, brown sugar, pineapple, soy sauce, lime juice and garlic to the instant pot. Mix well.
2. Add the chicken thighs to the pot.
3. Put the lid on, and set to manual high pressure for 12 minutes (10 minutes if using fresh chicken)
4. Don’t forget to seal the steam valve
5. When it is done cooking, do a Natural Pressure Release (NPR) for at least ten minutes. Then do a quick release.
6. Remove chicken from pot. You can leave whole or shred. Let the juices stay in the pot to thicken.
7. Add the cornstarch to the water and mix well. Add to the pot.
8. Turn the “Sauté” function on, and mix the cornstarch mixture into the sauce. Let simmer while stirring often until thickened. About 5-10 minutes.
9. Pour sauce over chicken and serve with rice. Garnish with green onions and sesame seeds.
