Another #instantpot meal in the books. Spicy chili noodles with broccoli and bell peppers ready in less than 15 mins I’m loving this thing if you can’t tell lol. Noodles, pasta and rice dishes seem to be the sweet spot with the instant pot. . . Recipe: - 1 8oz package rice noodles - 2 cups of water Sauce: (this is for a spicy savory sauce. Could easily work with other sauce combos) - 1/3 cup soy sauce - 2 tbsp rice vinegar - 1 tbsp toasted sesame oil - 2 tbsp chili paste - 3 tbsp coconut sugar (or brown sugar or agave syrup) Veggies of your choice. I used: - 2 small heads of broccoli chopped into florets - 1 medium bell pepper thinly sliced . . To prepare: 1. Add noodles to instant pot 2. Add water to pot. 3. Mix sauce ingredients and add to pot. Make sure noodles are covered with liquid. 4. Cook on high for 3 mins. 5. Release steam with instant release. 6. Mix in veggies. 7. Garnish and serve! . . Chop the veggies while the noodles are cooking and you could have this ready in 10 mins! Next time I’m gonna try this with a peanut sauce . . I saw this fantastic demonstration on my friend Renae’s page at @thefeatherednester (she has awesome recipe demo’s on her stories often!) so I have made it several times and we all love it! Such a great, easy meal! I paired it with brown rice and steamed broccoli and it was a delicious dinner! The chicken was SO tender and yummy! . . . INGREDIENTS: *3/4 cup ketchup *1 cup crushed pineapple *3 Tablespoons packed brown sugar *1/3 cup soy sauce *1 clove minced garlic *juice from one lime *8-10 boneless skinless chicken thighs, frozen (about 2.5 pounds) *2 Tablespoons cornstarch for thickening *1/4 cup water *optional, green onions and sesame seeds for garnish . . . . DIRECTIONS: 1. Add ketchup, brown sugar, pineapple, soy sauce, lime juice and garlic to the instant pot. Mix well. 2. Add the chicken thighs to the pot. 3. Put the lid on, and set to manual high pressure for 12 minutes (10 minutes if using fresh chicken) 4. Don’t forget to seal the steam valve 5. When it is done cooking, do a Natural Pressure Release (NPR) for at least ten minutes. Then do a quick release. 6. Remove chicken from pot. You can leave whole or shred. Let the juices stay in the pot to thicken. 7. Add the cornstarch to the water and mix well. Add to the pot. 8. Turn the “Sauté” function on, and mix the cornstarch mixture into the sauce. Let simmer while stirring often until thickened. About 5-10 minutes. 9. Pour sauce over chicken and serve with rice.
