Mediterranean roast veggies. Fresher & saucier style roast veggies! I cooked this on Sunday & I’m having it with mixed salad leaves & a tempeh crumb for my lunches this week but this is also EXCELLENT with pasta & a tin of beans or your preferred protein. It’s 2 red capsicums, 2 zucchinis, 1 red onion, around 5 garlic cloves & 6 tomatoes. But all you really need to do is fill a tray with veggies (the more tomatoes you use the saucier it will be), add salt & pepper & a drizzle of extra virgin olive oil then bake until soft & squishy with a little colour. The exact time will depend on how much veg you use. This took around 45mins on 200C. I mixed through freshly chopped basil & parsley once cooked but you could add dried herbs at the start instead. I also often blitz this up to mix with pasta so that it looks like an ordinary pasta sauce for the girls #mumtricks

KIDS VEGGIE MULTI SMOOTHIE Getting kids to eat their veggies and get the good stuff in them can be a bit of a challenge sometimes, but I’ve managed to get them having nearly a cup of veggies with their brekky with this yummy smoothie! I get the kids to help me cut up the veggies and make the smoothie so they know that veggies aren’t the devil because they love the flavour of this! 1/2 a cucumber 3 sticks of celery BIG handful of spinach & kale mix Grated fresh ginger Small handful frozen mango 2 teaspoons @hivitahealthcare kids Liquivita (tropical flavour!) Add water and BLEND! I also make this for myself with the adults liquivita as an on the go brekky for my early starts and my body loves me for it. #sp

BANANA & CHOC CHIP MINI LOAVES • • These delicious little loaves are served up for afternoon tea for the lucky little kiddies at @onlyaboutchildren . • • Here’s the recipe (you can either make as a big loaf or use mini loaf tins to make 3-4 smaller mini loaves) ⚡️INGREDIENTS⚡️ ✅250g Wholemeal self-raising flour ✅1 tsp Cinnamon, ground ✅1/2 cup Coconut, desiccated ✅1/2 cup Dark choc chips ✅1 tsp Vanilla extract ✅2 Bananas, mashed ✅1 cup Milk ✅1/3 cup Extra virgin olive oil ✅1/4 cup Rice malt syrup ⚡️METHOD⚡️ 1️⃣Preheat oven to 180C. Line loaf tins with baking paper. 2️⃣Combine flour, cinnamon, chocolate chips and coconut in a mixing bowl. 3️⃣In a separate bowl, combine mashed banana, vanilla extract, milk, olive oil, rice malt syrup. 4️⃣Add the dry ingredients to the banana mixture. (Note: add additional water or milk as required). 5️⃣Pour mixture into lined loaf tins and bake for 60 minutes or until a skewer comes out clean. 6️⃣Leave to cool on a wire rack before cutting into slices.

Do you have a kid that is dairy free? Even if they are not, this post is for you too!⠀ .⠀ Calcium, along with Vitamin D, is a key nutrient for kids. They have lots of bone growth going on, among other things.⠀ .⠀ There are lots of ways kids can get calcium without dairy! Including fortified dairy alternatives AND other foods.⠀ .⠀ One of the reasons cows milk is often encouraged is because it contains calcium carbonate, a form of calcium well absorbed in the body. Milk also has larger amounts of calcium per amount so it helps ensure kids are getting enough!⠀ .⠀ But the same can be true of milk alternatives if you know what to look for!⠀ .⠀ Some dairy alternatives and foods are fortified with less absorbable forms of calcium (like calcium tri phosphate). You need larger quantities of that form of calcium to get the needed amount.⠀ .⠀ If you are looking for dairy alternatives, read the label! Look for calcium carbonate. ⠀ .⠀ Also, try to get regular intakes of some of these other foods that naturally contain calcium.⠀ .⠀ How much Calcium does your kid need each day?⠀ ⠀ 7-12 mo 260 mg (formula/breast milk)⠀ 1-3 yr 700 mg⠀ 4-8 yr 1,000 mg⠀ 9-18 yr 1,300 mg⠀ .⠀ Which of these sources surprised you? ⠀
