- I've had a trying week. I ran a department that normally has 3 dietitians, by myself, all week. I went to the gym regularly, ran 21 miles, went to to barre this morning. I'm tired. I'm drained. I'm not looking for any hands to be clapped. My focus is strong. I wouldn't have it any other way, I pride myself on how I can handle difficult situations. But amidst all the chaos, I'm not going to eat off course bc I need to feel mentally and physically strong. This is a display of a day of eats in my life. It fits my needs. Cook 2 servings whole grain protein pasta
Stir in on low-medium heat
1 can of tuna
2 stalks chopped celery
1 cup peas
1/4 red onion chopped
1 tbsp chopped parsley
1/2 tsp Apple cider vinegar
2 tablespoons low-fat mayo
1/4 cup mozzarella or vegan mozzarella
Salt and pepper .
