This post is about filling macarons something that has been requested by @nikimscott I always prepare the filling in advance, so when the macarons have baked and cooled down, I am ready to pipe the filling I always lay them paired and then start piping I use different piping tips / nozzles, but one of my favourites is Wilton 2A Swipe to the left to see the video ⬅️ (please, don't jugde me - I have only recently started filming short videos like this I am still learning, so please bare with me on this one). Salted Caramel - one of my favourite fillings for macarons it is very easy to make so homemade always tastes the best Recipe ❤: ✔Double Cream / whipping cream - 190 grams ✔Caster / Refined sugar - fine - 190 grams ✔Unsalted butter - 150 grams ✔Gelatine Powder - 4,5 - 5 grams if granulated + 20 grams of water OR 2 gelatine leaves ✔Sea salt - 2 grams ✔Vanilla pod and any nuts (optional) Method ❤: ➖ prepare all the ingredients and weight them ➖ mix granulated gelatine with water and leave it to soak up / or soak up gelatine leaves ➖ put the sugar into a saucepan and turn the heat up on medium ➖ pour the double cream / whipping cream into a separate saucepan and turn the heat up on low ✔ if you want you can add 1 vanilla pod at this stage to infuse the cream - remove it later on ➖ wait until 2/3 quarters of sugar have melted and then start stirring the sugar with a silicone spatula to help the other part disolve - turn on the thermometer ➖ turn the heat up to medium to help the cream heat up quicker ➖ wait until the sugar has fully dissolved and there are no clumps - it should be beautiful amber colour ➖ by the time sugar syrup reaches 170 C, the cream should be boiling so at this stage take the saucepan with cream and start pouring it into the sugar syrup and mix with a whisk and keep boiling it for another 2 minutes ❗It is very important to wear a heat proof glove or use a whisk with a longer handle as well as a deeper pan as the minute you pour the cream it will increase a lot and the mixture will be extremely hot - so please, be very careful ‼ ➖ take the pan from the heat and put the gelatine as well as sea salt and blend with a blender until combined. ➖ the caramel will need to cool down to 40 C - 50 C ➖ add the cold butter into caramel and blend again until you get a smooth caramel ➖ transfer it to the bowl and cover with a clingfilm and leave for a couple of hours to set in the fridge ➖ transfer the caramel into the piping bag and fill macarons ✔ if you want you can add any nut or praline in the middle and sprinkle with some sea salt on top ➖ leave macarons overnight in the fridge to soak up all of that goodness Enjoy! ❤
