One of my favorite burgers: Korean Fried Chicken Burger! Not that difficult nor time-consuming to make, but absolutely bloody delicious! Recipe and method for 4 hamburgers: Mix 2 dl of sour cream with some salt, freshly ground black pepper and garlic powder, onion powder, paprika powder and Korean chili powder (gochugaru). Trim of fat and tendons from 4 large chicken thigh fillets. Put the chicken in the marinade and let it sit for preferably 24 hours, or as long as you can (10 minutes is also ok but it won't tenderize it as much nor result in the same even saltiness). If you're putting the chicken in the fridge, make sure that you take it out at least 40-60 minutes before frying. Cucumber: mix 0.5 dl each of sugar, rice vinegar and cold water until the sugar dissolve. Thinly slice half a cucumber and add to the brine. Mix 1 dl of American mayonnaise (e.g. Hellmans) with a tbsp of Sriracha. When done marinating, mix 2 dl of plain flour with some salt, pepper, paprika powder and gochuang. Dip the chicken in the flour mixture and deep-fry in 180 degree oil for 5 minutes. Don't fry too much at a time, since this will lower the temperature of the oil, stopping the frying process. Remove from oil when it looks golden brown. Cut in the chicken to make sure its cooked if you're unsure! Butter brioche buns and roast in a 200 degree oven for 5 min or in a frying pan. Wanna get a really creamy carbonara (that's not authentic I know, but it's bloody delicious)? Yeah you do! The answer is cream cheese. Here's how you get it for yourself and a friend! Combine 4 egg yolks with 1 dl (about 30 g) of freshly grated parmesan, 0.5 dl of cream cheese and lots (I mean lots) of freshly ground black pepper. Fry 150-200 g of pancetta or bacon until crisp. Put on a plate and reserve the fat in the pan (you can remove some of it if it's too much). Turn off the heat of the pan. Boil 250 g of good quality pasta al dente. Reserve some pasta water when draining. Add the pasta to the bacon pan and pour over the cheese and egg yolk mixture. Put it back on the same heat source as you fried the bacon. Toss/combine until it gets really creamy, add pasta water to loosen up if it's too thick. Plate and top with more freshly ground black pepper and some finely chopped parsley!
