Don’t you just love being in the cellar amongst the barrels? My mom and I were treated to a behind the scenes tour @strewn_winery guides by their knowledgeable sommelier Juan. I really enjoyed the tasting of their Cab Sauv grown in different soil but the same vintage. Each brings such different flavors! What are my fellow wine lovers up to this weekend?

Traditions. Bubbles to start. The scones and cucumber sandwiches are always the favourites, though there was an excellent Shropshire blue that had my attention. With Sloane tea alongside (Heavenly Cream and Darjeeling 2nd Flush). The happiest of days to mothers of all forms, and love to those who are missing theirs, or for whom this day is difficult. ♥️

Don’t you just love inviting space while wine tasting? @triuswines offers small lot wine in their loft, a cozy area with an experienced staff that elevates tasting to the next level! My favorite take away is their Red Shale Cab Franc Grippy tannins with blackberry and cocoa flavors along with a long finish makes this one of my top favorite Cab Francs I’ve had! Cheers to almost the weekend

I had the pleasure of visiting @konzelmannwines this past weekend and taking part in their estate cellar experience. It starts with a lovely tour of the grounds and production area while providing details of the rich history behind this winery situated on Lake Ontario. Herbert Konzelmann is a fourth generation wine-maker and the first in the family to leave Germany in 1984. We were very lucky to have Gus as our guide, bringing his wealth of knowledge to our tasting. My favorite is their Meritage Reserve, a perfect blend of Cab Franc, Cab Sauv and Merlot A bonus is the delicious charcuterie served that has local meats and cheese If you’re in the Niagara area, I recommend @konzelmannwines for great wine and hospitality!

Last weekend I had the pleasure of visiting @konzelmannwines for their junk food and wine pairing experience! Four wines were paired with delectable sweets My favorite? The butter tart, a classic Canadian dessert with Chardonnay My mom and I were treated to a very in depth tour of the winery, learning all about what makes Konzelmann winery unique. The founder, Herbert Konzelmann, is a fourth generation winemaker. He settled here from Germany in 1984, picking this beautiful spot on Lake Ontario for its perfect mesoclimate. My favorite take away is their Brut Rosé! An off dry Rosé with flavors of tart cherry and strawberry with a creamy finish makes this a perfect bubbly for an aperitif or a dessert in itself! I also had the opportunity to try a frozen grape used to make ice wine!

How is Icewine made❄️? ▫️⠀⠀⠀⠀ This weekend I learned that 80% of the Icewine on earth is produced in Niagara-on-the-lake (NOTL) in Ontario, Canada !! Why might you ask? It all has to do with the special climate here in NOTL. ▫️⠀⠀⠀⠀ But, before I can get to how it’s produced, some of you might be wondering “what the heck is Icewine” Icewine is commonly referred to as a dessert wine, because it is extremely sweet in nature. The grapes used in the production of Icewine are harvested when they are frozen❄️. ▫️⠀⠀⠀⠀ Niagara-on-the-lake is a pocket in Canada where some of the world’s best wines are produced. This region is optimal for wine production in Canada, since its latitude is similar to that in Burgundy or Bordeaux, France . NOTL is one of the most southern points in Canada, and is surrounded by the Great Lakes, making temperatures moderate and optimal for grape growing. Not to mention, winter temperatures reach to -20 degrees Celsius, making it the perfect place for Icewine grapes to be grown. ▫️⠀⠀⠀⠀ The secret to the sweetness Grapes used in the production of Icewine are harvested once the grapes have sustained temperatures of at least -8 to -10 degrees Celsius for a period of time. To put it simply, the colder the temperatures the sweeter the grape, due to the water freezing out, and a higher sugar concentration resulting. The temperature is crucial, as grapes that are harvested too late in the winter season have a lower sugar concentration, thanks to grapes being TOO frozen and sugars hard to extract out‍♀️. ▫️⠀⠀⠀⠀ In Canada, there are regulations in place of what temperatures and grapes are acceptable for the production of Icewine. “Icewines” that do not meet these criteria are not deemed “real” and are thus referred to as “Ice wine” ß with a space between the two words. All legitimate Icewine is VQA certified (look for the label). Keep this in mind when purchasing your Icewine, friends. ▫️⠀⠀⠀⠀ Let me know, have you tried Icewine before?
