Single serve frozen treats conveniently prepped in a muffin tray YUM!! ⁠ ⁠ Ingredients:⁠ ⁠ Makes: 12 cups⁠ ⁠ For the Granola Bites:⁠ ⁠ 2 cups Nature’s Source Crispy Crunch⁠ 2 tbsp peanut butter ⁠ 2 tbsp honey ⁠ 2 cups full cream yoghurt, plain ⁠ 2 cups dark chocolate drops, melted⁠ ⁠ Recipe:⁠ ⁠ For the Granola Bites:⁠ ⁠ 1. Line a 12-cup muffin tin with cupcake liners.⁠ ⁠ 2. In a large mixing bowl, combine the Nature’s Source Crispy Crunch with the peanut butter and honey and mix well. Add more honey if needed to create a sticky consistency. ⁠ ⁠ 3. Press the granola mixture firmly into the base of the cupcake liners.⁠ ⁠ 4. Freeze for 1 hour or until firm.⁠ ⁠ 5. Spoon some yoghurt onto the granola layer and freeze for another hour or until firm.⁠ ⁠ 6. Melt chocolate drops in a microwave-safe bowl in the microwave, stirring in 15 second increments until melted. ⁠ ⁠ 7. Distribute the chocolate evenly amongst all cups by spooning this onto the yoghurt layer.⁠ ⁠ 8. GENIETEN… Ingrediënten: - Koolbladeren (groene – of savooiekool is het best geschikt) - Wortelen, in reepjes gesneden - Komkommer, in reepjes gesneden - Rode kool, in reepjes gesneden - Tofu, in reepjes optioneel - Hummus (zie renskroes.com) - Koriander - Gekookte (bruine) rijst of quinoa Dipsaus: 3 el #gucot notenpasta of pindakaas 1 el #gucot tamari Water, naar wens Bereiding: Was en droog de koolbladeren goed. Snijd de stengels weg zodat het vouwen makkelijker gaat. Hou je niet van rauwe kool, blancheer de bladeren dan kort. Verdeel vervolgens de rijst of quinoa met de bolle kant van de lepel gelijkmatig over de wrap. Doe daarna alle gewenste ingrediënten op de kool en rol het zo strak mogelijk op (vouw het op als een burrito). Snijd ze door. Maak de dipsaus door de notenpasta en tamari in een kommetje te doen. Roer goed. Voeg water toe om het verdunnen. Ook lekker met wat sambal ;) Dip het met de roll in de saus en geniet!

En #powerfoodies, geniet ervan… Ingrediënten gegrilde aubergine: • 2 aubergines, in tweeën gesneden met de stengels • 1 el olijfolie, koudgeperst | meer indien nodig • 2 el Italiaanse kruiden • 1 teentje knoflook, uitgeperst • 1 tl Keltisch zeezout • 1/4 tl zwarte peper Ingrediënten notencrumble: • 100 g pecannoten of walnoten, gehakt • 1 kleine ui, gesneden • 1 el tamari • 1 el olijfolie • 1/4 tl komijnpoeder • 1/8 tl chilivlokken of cayennepeper • 1/2 tl Keltische zeezout • 1/4 tl zwarte peper ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingrediënten dressing: • 2 el olijfolie, koudgeperst • 115 g (vegan) mayonaise • 1 teentje knoflook • 1/2 tl Keltische zeezout • 1/4 tl zwarte peper, meer naar smaak Garnering: • 1 el verse basilicum, grof gehakt • 1 el peterselie, grof gehakt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bereiding: 1. Doe alle ingrediënten van de dressing in een blender en mix het tot een romig geheel. 2. Doe alle ingrediënten van de notencrumble in een steelpannetje en zet het op middelhoog vuur. Mix met een lepel alles door elkaar en rooster + roer het totdat de noten goudbruin zijn (ca. 5-10 min). 3. Snijd de aubergine in tweeën en snijd diepe vierkantjes in het vruchtvlees en bestrijk het met olijfolie (lekker veel), kruiden en zout & peper. En leg ze voor ongeveer 3-4 (per kant) op de grill totdat ze goudbruin en zacht zijn. 4. Leg ze op de schaal en doe er de notencrumble, dressing en kruiden overheen.
