GINGER AND GARLIC NOODLES WITH TOFU AND PAK CHOI Can’t quite believe this is my 100th post! Time goes fast when you are eating happy Celebrating by having one of my all time favourite dishes... a simple bowl of noodles. Growing up in a Chinese household I ate noodles at least twice a week, every week and I never ever got bored of them! Still to this day I believe that there is nothing a good bowl of noodles can’t sort
This bowl is egg noodles with a sesame, soy sauce, ginger and garlic dressing. I served it with steamed pak choi, spring onion, fried tofu and a runny egg. PERFECTION!

[CURRY RAMEN PICANTE]
Esta semana me puse a experimentar y se me ocurrió esta mezcla entre ramen y curry. Me encantó cómo quedó! Es picante y muy sabrosa. Me demoré 15 minutos y ya estaba listo así que además es una alternativa rápida. Yo usé salsa de ostras que no es vegetariana pero pueden omitirla si es que quieren. Además usé Pak Choi que nunca lo había comido pero siempre lo veía en este tipo de sopas . Pueden revisar cómo preparé este plato en mis historias destacadas ☺️.
Ingredientes (4 personas)
- 1 taza de champiñón (yo ocupé Paris y Shiitake).
- 2 latas de leche de coco.
- 1 cda. de pasta de curry rojo ( se encuentra en tiendas de comida india y de comida oriental. Yo la compré en La Vega).
- 2 pak choi (también en La Vega).
- 3 cdas. de salsa de ostra.
- 2 cdas. de salsa de soya.
- 1/2 cdta. de aceite de sésamo (opcional).
- 1 taza de diente de dragón.
- 2 huevos duros.
- 1/2 taza de agua (para diluir un poco el caldo si es que está muy espeso).
- 2 paquetes de ramen (yo usé Sabor Peruano).
Preparación:
1. Saltear los champiñones con el diente de dragón. En una olla poner la leche de coco y la pasta de curry revolviendo hasta disolver por completo.
2. Agregar la salsa de soya, la salsa de ostra y al aceite de sésamo a los champiñones. Retirar del sartén y usar el mismo para agregar la leche de coco. En otra olla cocer los fideos ramen y saltear también el pak choi previamente limpio. Cortar los huevos en mitades y servir en un plato hondo un poco de caldo, los champiñones, diente de dragón, una mitad de pak choi (yo le puse dos porque me gustó mucho jeje). El ramen y la mitad de huevo duro.

‘Protein is overrated’- that phrase is ludicrous! Protein is a significant component of your hair, skin, muscles, antibodies, hormones, and neurotransmitters. It regulates fluid balance, acts as a buffer to maintain blood pH, contributes to immune function, can be a source of energy and contributes to satiety. How can a nutrient so fundamental to your wellbeing be overrated?

Sure enough, some of us rely excessively on animal protein and could do with including more plant protein. But, that doesn’t make protein redundant. On a purely plant-based diet, you run the risk of not getting enough protein, and that’s not because plants don’t contain enough protein. It is because your body doesn’t absorb the protein in vegetables as efficiently as it does from animal products, and because over time, high consumption of phytates can negatively affect the enzymes (especially trypsin) that are responsible for protein digestion.

If you are not getting enough protein, you start to look extremely skinny, and you may experience hair loss, fatigue, dental abnormalities, pale skin, anaemia, oedema (water retention), advanced ageing, higher risk of infectious diseases and nutrient deficiencies.

Not everyone is going to get protein deficient or experience adverse effects. But if you’re starting to look extremely skinny, and feeling unwell in general, you should probably reexamine your diet with the help of a professional. This is not to say that you need to incorporate animal products into your diet or that you need to go mad on protein. It is to tell you that protein is CRUCIAL, and it should not be overlooked or underestimated! Get enough, but not too much.

• T E R I Y A K I - S A L M O N •
I’ve looked high and low for an easy teriyaki salmon recipe. This was so easy to make and tasted amazing next time I’m carving up, I’ll serve this with some rice noodles

Ingredients:
• salmon (msc) x 2
• Pak Choi x 2
• 1 vegetable stock cube
• soy sauce - 2 tbsp
• sesame oil - 1tsp
• 1 green chilli
• Ginger (small piece)
• 2 tsp honey
• 2 garlic cloves
➖➖➖➖➖➖➖➖➖➖➖➖➖
Method:
1) put soy sauce in a bowl with the sesame oil and honey. grate in a small (half a thumb size) piece of ginger ▫️
2) Put salmon in an oven dish and pour mixture over the top. Bake for 10 minutes
▫️
3) heat oil in a pan. Chop leaves off pack choi, wash and add to the pan with a dash of olive/coconut oil and 2 garlic cloves
▫️
4)once pak choi wilts, add 70ml vegetable stock. Simmer for 5 minutes.
▫️
5) serve in a bowl, with salmon on top and 1 chopped green chilli
