INSTRUCTIONS: 1. Rinse the quinoa under cool running water. Place the rinsed quinoa in a pot with 1.75 cups of water. Put a lid on top, bring it to a boil over high heat, then reduce the heat to low and let simmer for 15 minutes. After 15 minutes, turn off the heat. Allow the quinoa to cool before making the salad or else the heat will wilt the parsley and vegetables. To cool it faster, spread it out on a baking sheet and place in the refrigerator for 30 minutes. 2. While the quinoa is cooling, prepare the rest of the salad. To make the dressing, squeeze the juice from the lemon into a bowl (about 1/4 cup). Mince the garlic and add to the lemon juice along with the olive oil and salt. Whisk to combine, then set the dressing aside. 3. Dice the tomato and cucumber. Rinse the parsley well to remove sand and grit, then chop well. Add the cucumber, tomato, and parsley to a large bowl. 4. Once the quinoa is cooled, add it to the bowl with the vegetables. Pour the dressing over top, then stir until everything is well coated. Serve immediately or refrigerate until you're ready to eat. Super flavorful, delicious, and filling. I cook the quinoa in vegetable broth and mix it with sautéed onions, black beans, corn, and sun dried tomatoes . I serve it on a bed of romaine and top it with avocado ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sending all of you wishes for a seriously incredible day that fills you with joy and gratitude ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: 1 Tablespoon grapeseed oil, 1 medium onion (chopped), 3 medium cloves garlic (minced), 3/4 cup quinoa, 1 1/2 cups water, 1/4 teaspoon chipotle powder, 1/2 teaspoon paprika, 1/2 teaspoon fine sea salt, 2 teaspoons Vegetable Better Than Bouillon, 1/4 cup oil packed sun dried tomatoes (chopped), 2 cups cooked black beans, 1 1/2 cups corn kernels (frozen), Cilantro (for topping), Avocado (for topping). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions: 1) Heat oil on medium heat in a medium sized skillet that has a tight fitting lid. 2) Add and sauté the onion for 8 min (until translucent and golden brown). 3) While the onion is sautéing, rinse the quinoa thoroughly in a fine mesh strainer. Set aside. 4) Add the garlic and sauté for 30 seconds (until fragrant). 5) Mix quinoa into the garlic and onion mixture. Cover with water, chipotle powder, paprika, fine sea salt, and bouillon. Stir and bring to a boil. Reduce heat. Simmer, covered, for about 20 minutes (or until the quinoa is tender and the broth is absorbed). 6) Fluff with a fork and stir in corn kernels and stir. Continue cooking until the corn is heated through (about 5 minutes). 6) Stir in the black beans and sun dried tomatoes. La mia colazione stamattina: Quinoa e riso integrale soffiato con yogurt bianco intero e biologico (lo stesso che do a Edo per merenda, con soli due ingredienti: latte e fermenti). Quando dico ai miei pazienti di consumare cereali *veri* a colazione inizia una frenetica ricerca del prodotto giusto e quasi sempre si finisce con il mettere nel carrello il “senza zucchero” “con più fibra extra” “light”, ma non è di certo a questi che mi riferisco. Anche perché nascondono ben altro. I cereali *veri* sono quelli con un solo ingrediente: il cereale, appunto. Avete mai visto quanto è lungo l’elenco degli ingredienti dei cereali più presenti negli scaffali? Alcuni arrivano a contenere il 25% di zucchero. Immaginatevi di aggiungere nella tazza da colazione 5 cucchiaini di zucchero, è proprio quella la quantità. E a quelli che mi dicono “ma questi però non sanno di niente” rispondo: finché per te non sanno di niente, significa che sei ancora abituato al sapore dolce creato dalle aziende per renderti dipendente da un gusto che in natura non esiste. Il cereale zuccherato, la brioche, la merendina, dovrebbero essere occasionali, non rientrare quotidianamente nella nostra colazione. Insegnatelo ai vostri figli che iniziano con curiosità a muovere i primi passi nel mondo del cibo.
