I am always looking out for better cooking oils that make my food tasty and skin healthy. I recently came across the health benefits of Red Palm oil from Malaysia on the internet and so ,it was an absolute honour to attend the interactive session with the *Minister of Primary Industries*, Teresa Kok ma’am along with the other dignitaries who enlightened us about the health benefits of red palm oil. It was great to know that red palm oil is very high in the antioxidants beta-carotene, lycopene and tocotrienols, a form of vitamin E, that is also said to be cardio-protective. This great informative and interactive session organised by @thinkpalmoil at @tajlandsend cleared all the doubts in my mind about Red palm oil .It is definitely something which can be incorporated in Indian cooking as it is free of trans fat, cholesterol etc. Therefore, I thought about penning down a small jingle to sum up the health , beauty and fitness benefits of palm oil with the following jingle “Jack and Jill went up the hill to fetch a pail of water , Palm oil takes care of my health like mother care for daughter” And this event was even more special for me as I received the Award for my jingles from the Honorable Minister of Primary Industries (Malaysia) Teresa Kok , Ma’am. Hope you all have a wonderful Tuesday evening. — RECIPE: 1 cup tahini 3 LARGE tbsp raw cacao powder 1/4 cup coconut oil, melted (I used the one by @Alphahealthproducts) 4 tbsp coconut cream, from full-fat can of coconut milk 2 tbsp of coconut milk powder 2 tbsp sesame seeds 1 tsp Himalayan pink salt 1-3 drops liquid monk fruit sweetener (can also sub for honey or maple syrup) — INSTRUCTIONS: 1. Melt coconut oil + coconut cream in microwave. 2. Then in a large bowl combine all remaining ingredients and mix really well. 3. Line a Tupperware with parchment paper and evenly pour mixture. 4. Place in fridge for 10-15 min. 5. Happy weekend everyone. Things come and go, time passes but our memories stay forever. Create amazing memories in life with people around you. I often had very little sleep during my visit to Africa. Lots of work; meeting women farmers/vendors, Kids and traveling through the villages. But I also managed to spend some down time after work with my host (Mama Jawara cleaning the veggies) and some of the women we work with. They truly though I didn’t know how to cook until they took me to the local market. Once I saw the fresh veggies & fish, I turned into an African chef and boy was the food good lol. I made some awesome fish, veggies with Fonio. This is a lot healthier than rice and has been believed to surpass the benefits of quinoa. It is also enjoyed by people with diabetes because of its lower glycemic index. Fonio grains are a member of millet family, it is gluten free and also very easy to digest. Forget about the benefits, all I know is, it was finger licking good . Sorry was too hungry to take pics of the food :), but I have different plates of African Food to share later . Roasted Spicy Chickpeas tossed in @Nutiva's Organic red palm oil and served with tahini, ""cheesy"" kale Recipe: For the chick peas: Ingredients 1 can chickpeas, rinsed and drained 1 Tbsp of @Nutiva's Organic red palm oil 2 Tbsp of tandoori spice mix (cumin, salt, pepper, paprika, cayenne, ginger and cardamom) Preheat oven to 375F. Toss the rinsed chickpeas in a bowl with the palm oil and spices. Bake for 25 minutes, until chickpeas are crispy and golden. For the kale: 2 cups of curly kale 3 Tbsp tahini Warm water to thin Drizzle of olive oil 1/2 lemon squeezed 1 Tbsp maple syrup 1 Tbsp of nutritional yeast Pinch of salt How to: Add all ingredients in a mixing bowl, whisk well and set aside.
