Our Cheat way (but effective) to make Thai Rice porridge โจ๊กไก่สับ with made from scratch chicken meatballs (Serving:3-4) Marinate ; - 1 lb minced chicken (I use chicken breast) - 1 tsp oyster sauce - 1 tsp soy sauce - 1 tsp cooking oil - 1 1/2 corn starch - A dash of white pepper The rest you’ll need; - 3 cups cooked rice + 4-5 cups water to boil - 1 1/2-2 cups chicken stock (I prefer add less amount of stock first if the rice is too thick you can add a little bit more until you see the consistency you like) - 1 Tbsp soy sauce (or to taste) Condiments: chopped green onion , sliced ginger , soy sauce and white pepper. #pearscongee

congee | fried garlic, minced mushrooms, scallions, chili pepper oil, cilantro, ginger . . had a sudden craving for my dad’s 大米粥 the other day. it’s also known as congee— basically a silky, savory chinese rice porridge. you can make it on the stove but it’s even easier with an instant pot/rice cooker; i just washed 3/4 cup jasmine rice and cooked it with 4-5 cups water on the porridge setting. topped with savory fried garlic, mushrooms, sliced ginger, and lots of chopped scallions. felt oddly comforted while eating this (you know some dishes that have that quality?) so many childhood memories attached to this one

Rice Porridge, haven't had this in a long time, over 15 years, but I bought a rice pudding a few days ago , it wasn't really that good but I got the cravings for rice porridge this morning, tried to get some from a Haitian restaurant this morning but they were sold out , so I decided to make some! Luckily I had some ingredients on hand! #usewhatyouhave I didn't realize when I was adding the milk it wasn't recording ! Sorry guys! Do you remember having this growing up in the #Caribbean ◾ Ingredients 5 cups water 1 cup jasmine rice, rinsed 3 cinnamon sticks 4 bay leaves 1/2 - 1 teaspoon nutmeg 1 teaspoon vanilla extract 1/2 cup raisins, optional 1 can evaporated milk Condensed milk or sugar to taste ◾ Note You can also blend your rice for a smoother texture if you choose too, after it has been boiling for 30 minutes.
