Every fall my parents give me a big bushel of organic apples from their trees to make into all sorts of goodies. Usually I just can a batch of applesauce & apple butter and pitch the scraps. This year I got to thinking, what can I do with all of these scraps? With a little google search I found out that homemade raw/unpasteurized apple cider vinegar is simple to make and so so good for you with the slow fermentation process! The finished product will be dark and cloudy, teaming with beneficial bacteria, enzymes and minerals that over-processed vinegars do not have. Another plus is you end up with a big batch for literally pennies and utilize something that otherwise would end up as trash! Win-win! Here’s the recipe: 1) Throw peels & cores into a jar and cover completely with sugar water (2 Tbsp to 2 cups of water) to start the fermentation process 2) Cover with something breathable (coffee filter, paper towel, washcloth, etc) 3) Place in a warm, dark place for 2-3 weeks 4) Strain out the peels & cores, then return the liquid to the same jar and cover again. Leave it to continue to ferment for 4-6 weeks.
