I want to start off by saying that I don’t know what a “regular” dietitian even is. I think the best dietitians out there are the ones that encourage all foods, and that to me is what a “regular” dietitian is/should be. • But this is really about every time a patient has come to me saying I’m going to be mad at them for something they ate. Or someone who comes in for the first time fearing I’m going to take away all their favorite foods. The random person I just meet who hears I’m a dietitian and says “Oh God you would think I have the worst diet ever” or “Ignore what I’m eating right now!” with French fries on their plate. • What I mean to say is, I’m a compassionate dietitian. I’m supportive. Understanding. Non-judgmental (that’s a big one). And I know a ton of other incredible RDs like this who also help people find peace with food, stop dieting, and accept their bodies ✨ Big thanks to all the cool dietitians out there

And now, what you're really here for... The ultimate chocolate ice cream cake .. Crust - 1 cup walnuts (100g) - 1 cup pitted dates, loosely packed (150g) - 3 Tbsp cacao powder .. - 1 Tbsp coconut oil .. - 1/2 tsp vanilla extract .. - 1/8 tsp salt Filling - 1.5 quarts chocolate ice cream (48oz) Topping - 1/4 cup coconut cream - 1/4 cup dark chocolate chips .. - 2 Tbsp maple syrup Instructions: (1) in food processor, blend together all crust ingredients (2) press into lined 9" round springform pan (3) top crust with softened ice cream (4) freeze at least 1 hour (5) make topping by melting all topping ingredients over low heat on the stovetop (6) remove topping from heat and let cool for 5-10 min (7) pour topping over ice cream filling (8) decorate with desired toppings (9) either serve immediately or freeze. Throwing back to this caprese pasta salad, a super fresh + simple summer party/picnic idea.
