Good morning and happy new week! Vanilla cardamon nectarine and blueberry overnight oats to kick off Monday after a little run. How to Hope you've got a good week ahead. I'm have a bit of a home improvement week, which isn't my strong suit, so wish me luck!
To make:
- Mix 100 ml almond milk and 1/3 cup rolled oats with a pinch of ground cardamon and a little vanilla extract. Leave in the fridge overnight.
- In the morning top stir in a big spoonful of soy yogurt. I used @alpro plain with almond (not sponsored)! - Top with nectarines, blueberries, pistachios, banana and a drizzle of peanut butter. - And enjoy!

Happy weekend! Starting mine with a stormy run followed by this cinnamon raspberry ripple granola parfait. How to It is really blowing a gale out there. British Summertime eh? Hope you're having a fun weekend whatever you're up too!
To make:
- Stir a tbsp of chia seeds into 100ml almond milk. Mix in a little cardamon and vanilla extract and leave overnight in the fridge.
- In the morning toast 1/4 cup oats in a pan for a minute or two.
- Add ground cinnamon, and a little handful of almonds, unsweetened coconut flakes, sunflower seed and sultanas to the pan and toast for a further minute.
- Turn off the heat and add a heaped teaspoon of maple syrup and give everything a good stir.
- Spread out on parchment paper to cool and sprinkle with sea salt.
- It should be getting crispy after about 10 minutes so you can break it into clusters.
- Layer up the chia pudding, granola, vanilla soya yoghurt (I used @alpro not sponsored just a fan!) and crushed raspberries.
- Top with frozen raspberries and a drizzle of tahini!
- And enjoy.

Happy Sunday! How about a mocha cherry parfait to start the day? How to This is my second recipe from my collab with @califiafarms who have a new salted caramel cold brew almond milk out now. This time I've used overnight oats and paired it with cherries, almonds and some nut butter. Have you tried it yet? Still feeling pretty beat after my week so definitely in need of a coffee pick me up. Only 10 miles today for my long run as it's a recovery week but it felt tough and tired. Onward to next week though. Hope you're having a good weekend so far!
To make :
- Soak 1/3 cup oats in 1/3 cup @califiafarms salted caramel cold brew, stir in a tsp of cacao powder and a little maca powder. - Leave overnight in the fridge for all the flavours to mingle.
- In the morning mash a ripe banana and stir into the oats with a handful of sultanas.
- Top with soya yoghurt, cherries, almonds and a drizzle of your favourite nut butter and enjoy!

Happy new week A cherry and strawberry smoothie bowl to celebrate the return of the sunshine! How to So happy it feels like summer again today. And I've got a day off. To make:
- Soak 1/4 rolled oats in boiling water for 15 mins.
- Add the soaked oats to a high speed blender with a frozen banana, handful of frozen strawberries and cherries, a little ground cinnamon and maca and a teaspoon of tahini and ground flaxseed.
- Blend to smooth and glossy and top with more berries, banana, a little dark choc and peanut butter.
- Enjoy!
