Happy Monday, everyone! The weather has been so nice and warm lately. no need to wear any sweater while eating #nicecream bowls, hahahaha ‍♀️. Today I just want to show you guys this blue&purple galaxy nicecream bowl made by @andreeasbreakfast ‍♀️ • • • GALAXY NICECREAM BOWL ♡ 4 frozen bananas ♡ 1 + 1/2 tsp @rawnice blue spirulina powder ♡ 1 tbsp @rawnice pink pithaya powder ♡ 1 tsp vanilla extract . Blend the bananas until smooth (I use a food processor for that). Add in vanilla extract and blue spirulina powder and blend some more until the powder gets fully incorporated. Take out half of your nicecream and store it in the freezer. To the remaining nicecream add the pink pithaya powder and continue to blend until it gets incorporated and the mixture turns purple. Burgers are just life all summer long, don’t you think? These Paleo + Whole30 Greek turkey burgers are perfect for grilling, and you’ll love the fresh and creamy, dairy-free tzatziki sauce that goes with! ⁣ Ingredients⁣ For the burgers:⁣ * 2 lbs ground turkey⁣ * 1 can artichoke hearts, drained and finely diced⁣ * 1 cup olives, finely diced⁣ * 1/4 cup nutritional yeast⁣ * 1/2 tsp sea salt⁣ * 1/2 tsp ground pepper⁣ For the sauce:⁣ * 1/2 english cucumber, peeled and roughly chopped⁣ * 1 cup coconut yogurt (or sub 1/2 cup full fat coconut milk and 1/2 cup mayo)⁣ * 2 cloves garlic, peeled⁣ * 1/2 cup fresh dill⁣ * 1 tbsp lemon juice⁣ * Sea salt and pepper (to taste)⁣ For serving:⁣ * 1 head iceburg lettuce (can sub other lettuce or bun)⁣ * 2 avocados, sliced⁣ * 1/2 red onion, sliced into thin rings⁣ ⁣ Instructions⁣ 1. If you are grilling, prep your grill and preheat it to medium-high heat.⁣ 2. Chop artichoke hearts and olives as noted and add them to a bowl with the turkey, nutritional yeast, salt and pepper. Mix ingredients well. The mixture will be sticky, so coating your hands in olive or avocado oil will help you to form the patties without sticking as much. Form the mixture into 8 large burger patties.⁣ 3. Prep sauce by peeling and chopping the cucumber. Place cucumber between two sheets of paper towel and ring out the moisture from the cucumber. Place it in a food processor with the S-blade.⁣ 4. Add remaining sauce ingredients to the food processor and process into a smooth consistency. Refrigerate until served.⁣ 5. Either grill the burgers or cook them in a skillet (with some oil to coat) over medium-high heat. You may need to oil your hands again to transfer the patties from the plate to the grill/skillet. Cook for 4-5 minutes per side, or until completely cooked through.⁣ 6. While the burgers are cooking, slice avocado and onion. For the buns, cut the iceberg lettuce head into fourths. Cut off the bottom “stem” of each wedge of lettuce. Remove the thick inner pieces, leaving the outer leaves. You’ll split these leaves to form your top and bottom “bun”.⁣ 7. Now, put it all together! It’s Monday, and if you’re feeling like me…you need a little pick-me-up this week. Sooooo….I’m just going to leave this Meatza right here. Happy Monday everyone! ⁣ ⁣ Ingredients⁣ For the crust:⁣ * 1 lb ground beef⁣ * 1 lb ground pork⁣ * 1/3 cup almond flour (we used @bobsredmill)⁣ * 2 tbsp Italian seasoning⁣ * 1.5 tsp garlic powder⁣ * 1.5 tsp onion powder⁣ * 1 tsp sea salt⁣ * 1 tsp ground pepper⁣ For the toppings (or sub whatever toppings you prefer):⁣ * 1 cup marinara sauce (we’ve been using @luciniitalia in our kitchen lately - their sauces are Whole30 compliant!) ⁣ * 1/4 cup olives, sliced⁣ * 1/4 bell pepper, sliced into thin strips⁣ * 1/8 red onion, sliced into thin strips⁣ * 2 cups shredded cheese (optional, omit for strict Paleo. We use @trulygrassfed or @kerrygoldusa)⁣ ⁣ Instructions⁣ 1. Preheat oven to 400° F. To make clean up easier, you can line your sheet pan with parchment paper. Use a sheet pan with a lip as the crust will release fat while cooking.  A 12 x 17 size pan is best for this recipe, as it will force you to spread the crust out nice and thin to reach the edges of the pan. ⁣ 2. Add all of the crust ingredients to a large bowl and mix well to incorporate all of the ingredients evenly (we use our hands). ⁣ 3. Spread the meat out on the baking pan and form it into a thin, even layer. Shape it into a circle if you wish or you can make a square pizza. Just try to spread it out evenly, about 1/4 to 1/2 inch thick.⁣ 4. Place in the oven to bake for 15 minutes, or until the meat is cooked through. It will shrink and release some fat. ⁣ 5. Remove from the oven and carefully pour off the fat from the pan. Add the toppings to your pizza. Start with a base of sauce spread out in an even layer over the crust. Add the remaining toppings as desired. ⁣ 6. Place in the oven to cook for 10 more minutes. ⁣ 7. If desired, turn the oven to broil and broil for a few minutes to brown the toppings a bit (optional). ⁣ 8. Remove and allow the meatza to cool for a few minutes. Happy Monday fellas! We are kicking off the week with a homemade vegan lunch. Decided to meal prep some more interesting meals for this week - one of them being these Vegan Sweet Potato Black Bean Burgers with a side of air fried zucchini & avocado with hemp hearts. This recipe is SO good and soooo easy! Definitely a new meal prep staple for me • VEGAN SWEET POTATO BLACK BEAN BURGERS -1 can drained and rinsed black beans -1 can drained and rinsed corn -1 mini cooked sweet potato -2 chia eggs (2 tbsp chia seeds, 3 tbsp water) -1/4 cup coconut flour -1 tbsp ground turmeric -1/4 cup nutritional yeast -1/2 tsp sea salt -1/2 tsp black pepper * Place beans, corn, and sweet potato in a food processor. Combine until crumbly. Add in the rest of the ingredients, combine until fully mixed. Let sit for 5-10 mins to thicken. Place ~6 patties on lined baking sheet. One of my favourite food sources of Zinc? _ Dark chocolate of course! _ Zinc is the second most abundant mineral in the human body. Although extremely important (it is essential for the proper functioning of over 100 enzymes) it can’t be stored and must be consumed daily. Not a fan of dark chocolate, here are some other food sources of Zinc: nuts & seeds, pulses, shellfish, dairy and eggs. _ Jewelled chocolate bark: In a double boiler melt 100g dark chocolate (70% or higher) with 2 tablespoons coconut oil. Line a dish with baking paper. Pour melted chocolate onto sheet. Top with toppings of choice (I did homemade crumbled chocolate truffles and pomegranate). Cool. Enjoy!
