Happy Monday guys Hope you had a great start into the new week Yesterday's Sunday Pasta dinner was this simple yet delicious bowl with spaghetti and tomato sauce (+some vegan cheese on top) For the tomato sauce I added 4 cloves of garlic (minced) to a pan with hot olive oil (enough to cover the bottom of the pan) and fried the garlic for about 2 minutes (always making sure the garlic won't brown). Then I added 2 cans (each 400g) of plum tomatoes, 2 tbsp. tomato paste, 1 tsp. salt, 1/2 cup of hot pasta water and 1 tbsp. dried oregano to the pan and brought everything to a boil. E voila, Spagetti a la Leoni ✨ I really love wholegrain pasta with self made sauces. Guess what? Using the @alpro Soya Unsweetened, I made myself a pesto-style sauce. It turned out so delicious and creamy , too!✨ | Spagetti mit Pesto, was gibt’s besseres? Y’all this combo right here was I ate almost twice this plate So good!! Here we have sautéed okra with onions, stir-fried brown rice with broccoli, carrots, mushrooms and more veggies (I soaked the brown rice overnight before cooking it), baked plantains (added a lil bit of salt before baking and it tastes)!! I also added in a messy avocado on top after taking this picture because I so love avocado + rice. Anyone else crazy about avo-rice combo I grew up eating lot of okra as okra soup is a popular dish in the Cameroonian culture. I’m not always motivated to cook it tho so lately I’ve been enjoying sautéing it with onions. It’s fast, easy and so tasty as well. Okra is such a nutritious food, high in folate, vitamin K and it’s also rich in calcium, magnesium, vitamin C, potassium and even protein! How cool?!
