Pizza Toast
I’ve kept this version simple but this is a great vehicle for getting your kids to try new veggies or to serve veggies they wouldn’t normally eat
Why not try
Bell pepper (capsicum) cut into thin slices and roasted
Mushrooms, chopped and sautéed until they are nice and caramelised
Eggplant (aubergine) thinly sliced and roasted
Spinach thinly sliced into ribbons
Broccoli chopped into tiny pieces and sprinkled on top
Onion thinly sliced and caramelised

Possibly the best quick snack for your little teething baby :) 10 minutes to make, fill up a bag when they are frozen and amazing for a go-to quick snack. It's just yogurt and fruit! PLUS a whole lotta love ⠀

1 ripe banana⠀
1 teaspoon vanilla extract ⠀
10 strawberries, hulled ⠀
125ml Greek yogurt⠀
.⠀
Add the banana, vanilla and strawberries to a blender and blend until you have a smooth purée.⠀
Pour into a bowl, add the yogurt and mix well. (Do not blend the yogurt as it will make the mixture too runny.)⠀
Cover a plate with cling film. Pour the mixture into a piping bag and pipe little drops of the yogurt mixture onto the cling film.⠀
Put the plate into the freezer and freeze until drops are solid. Peel them off the cling film and keep in a covered container in the freezer.⠀

Italian Quinoa Bites - These are SO delicious and I guarantee your kids will love them! They are also 1 of over 80 lunch recipes in The Baby Friendly Family Cookbook, perfect for picnics, perfect for starting weaning and great for Mums who just want to rob their kids lunch! lol :D ⠀

Serve with a side of chopped cucumber and quartered cherry tomatoes!!! (these tomatoes were whole but 1/4 for babies, toddlers and small little ones).⠀

200g (1 cup) quinoa, rinsed⠀
500ml (2 cups) homemade chicken/vegetable stock or water⠀
4 tbsp rapeseed oil⠀
1 medium onion, finely diced⠀
1 red pepper, finely diced⠀
1 medium courgette, finely diced 2 cloves garlic, crushed⠀
10 basil leaves, finely chopped⠀
1 tsp dried oregano⠀
2 eggs⠀
2 tbsp tomato purée⠀
.⠀
Preheat oven to 180°C/350°F.⠀
Add the quinoa to a pot with the stock or water and cook as per the instructions on the packet. Once cooked leave aside to cool.⠀
Heat 2 tbsp of the rapeseed oil in a frying pan over a medium heat and gently fry the onion until translucent.⠀
Add the pepper and courgette and fry until soft and cooked through. Add the garlic and cook for a further 3 minutes, then stir in the basil and oregano. Set aside to cool.⠀
In a bowl, whisk together the eggs, tomato purée and 2 more tbsp rapeseed oil until fully combined. Then add the cooked quinoa and vegetables and mix well.⠀
Form into 24 evenly sized balls and place on a baking sheet lined with parchment paper.⠀
Bake for 25 minutes. Eat warm or cold!⠀

Toddler Friendly Oat and Fruit Bars
These are perfect for picnics or busy days when you are out and about with your toddler :) .
This recipe uses LOTS of ingredients from the @dunnesstores Everyday Savers range!

1 cup roasted nut mix
8 dates
1/4 cup raisins
1 1/2 cups oats
1 cup peanut butter
1/2 cup coconut oil
1 teaspoon cinnamon
.
Preheat oven to 160ºC.
Blitz the nuts in a blender until they become fine, pour into a bowl.
Add the dates and raisins to the bender and blitz until they form a sticky ball. Add to the bowl along with the remaining ingredients.
Stir well until it is fully combined.
Line a 20x20cm tray with parchment paper, empty in the mixture, then using a spoon press down well.
Bake for 20 minutes, then remove from the oven and cool fully before slicing into bars.

I love veggies! Like really love veggies and I try to get them in as much as possible. Breakfast time, lunchtime, dinnertime (of course) and SNACKS! And these Veggie Crisps are one of my favourite snacks....one of many many many! The best thing is that Oscar will eat an entire beetroot or parsnip or carrot just as a little munch! It's a great way of getting another portion in there and super delicious too.⠀

This recipe is from my new book but it's Monday and I want you to start the week with a humongous smile on your faces so here you go! :D⠀

Ingredients⠀
1 large sweet potato, roasted with skin on for 40 minutes until soft⠀
4 carrots, roasted⠀
4 cloves garlic, roasted⠀
400g (15oz) tinned chickpeas 4 tbsp tahini⠀
4 tbsp olive oil⠀
4 tbsp water⠀
1 lemon, juice only⠀
1 tsp ground coriander⠀
1 tsp ground cumin⠀
1⁄2 tsp ground turmeric⠀
1⁄4 tsp ground cinnamon⠀
3 stalks fresh coriander⠀

Place all of the ingredients for the hummus into a high- speed blender and blend until really smooth and silky. Add more water (1 tbsp at a time) if it is too thick.⠀
Pour the hummus into little bowls and leave in the fridge until you are ready to eat. Serve with a side of Hidden Heroes (if you are in Ireland) or falafel, or empanadas or just steamed veggie sticks.⠀
