Playtime with some black “Oreo” cacao added to half of the dough. The cacao will slow down fermentation. My tip is to add 5% starter more to keep both doughs fermenting at the same speed. I’ve folded the black into the white at preshaping. Just spread the black dough on top of the white dough and do an envelope fold. Flip the seam side down and shape into a “boule” . Final shape just like normal. I feel that the black is a bit overpowering so next time I’ll make the white dough slightly larger.

This is black garlic vinegar in the first fermentation stage...We make black garlic first and then add to fresh cider as a medium and ferment into “wine”- which in all honesty is not bad in it of itself! Once all the sugars that the garlic bulb holds are caramelized, fermentation moves quickly. This wine is then pushed all the way into vinegar. It’s one of the first vinegars we made and one of our favorites- it can be added to so many things to create depth- hot tip: bbq sauce...but the most exciting news: it is now available for purchase on our website along with some other new items!
