But that doesn't mean that you can't enjoy this healthy fruit in moderate serving sizes: they are acctually LOW FODMAP up to 30g! . To make avocado even lower FODMAP (meaning you can eat more) just mix your serving size of avocado with some mayonnaise and a squeeze of lime juice, and you'll have a delicious avocado mayo that tastes amazing on toasts, salads or in this sushi recipe below! . RECIPE by @lindseyeatsla Serves 4 2 avocados (LOW FODMAP: mix 1 avocado with mayonnaise and a squeeze of lime juice) 3-4 seaweed sheets 1 teaspoon sesame seeds 2 cups sticky rice 1/2 tablespoon rice wine vinegar 1/2 tablespoon salt - for the sweet potatoes 3 tablespoons miso paste 2 tablespoons @califiafarms almondmilk (unsweetened) 3 tablespoons soy sauce/tamari 2 tablespoons sesame oil 3 sweet potatoes - Preheat your oven to 400 degrees. Peel and cut your sweet potatoes like fries. Mix with miso paste, almond milk, soy sauce and sesame oil. Place in the oven until cooked through - about 35-45 minutes. - In the meantime, assemble your sushi roll by thinly slicing your avocado and making your sushi rice according to the package instructions. Once cooked, add rice wine vinegar and salt, stir well and let cool. - Once your rice has cooled and your sweet potatoes are ready. Assemble by spreading out your rice on the seaweed and adding your sweet potatoes and avocados in the bottom part of the roll. Top with sesame seeds and roll tightly. BROWNIE - 6 fresh dates (FODSWAP: 2-4 tbsp maple syrup) - 0.5 cup coconut sugar (FODSWAP: brown sugar or cane sugar) - 0.5 cup sweet potato - 0.5 cup coconut flour (FODSWAP: use buck wheat, quinoa or almond flour) - 4 tbsp coconut oil - 1/2 tsp salt - 1 cup cacao powder - 0.5 cup almond milk (if substituting flour, you might need less almond milk) - 1/2 tsp salt - 4 tbsp flax egg (mix 1 cup water + 4 tbsp flax seeds. Take 4 tbsp of the liquid to the cake) . . FROSTING - 100g vegan chocolate - 4 tbsp coconut cream . . HOW TO 1. Start with cutting a sweet potato into cubes. Boil until softens. 2. Mix all of the ingredients in a food processor. (Add in almond milk a little at a time to ensure the right consistency when substituting the flour) 3. Pour the batter into a mold. 4. Heat in the oven for 25 minutes (175 degrees) 5. Melt 100g vegan chocolate and add the coconut cream. 6.
