We've been eating from our food storage for about a month and a half now. The goal is always to get us to the next harvest without running out. I didn't meet that goal last year but I'm hoping we're on our way this year! I've canned 330 jars as opposed to last year's 204! SO much work but it really pays off once the snow begins to fly! .

How fitting that I just had to help my high schooler put together a slideshow presentation on botulism for his culinary arts class food borne illness project. (sorry kids, you don’t get to just eat in foods class) Just a reminder to myself to always follow recipes and methods approved by the national center for home food preservation. I cringe when I hear people say “it’s my own recipe”. Although botulism is very rare, it still happens. Make sure you’re pressure canning those low acid foods. Home canning is safe and easy, but if you’re not sure what you’re doing, contact your local extension office. ✌
Remember all those lemons I got from my neighbor, Bob. Well, today I am making preserved lemons. I have started doing these in smaller jars and changing the spices with each jar. I always do a “plain” one and then make variations as the mood hits. Today I will add a spicy version because you know I like all things hot - right? 30lbs of diced tomatoes canned and ready for winter, I feel like I should do more but I don’t have anymore jars on hand so I am leaning towards not doing more. The very local, package free tomatoes were $30, $1 per lb if bought in 30lbs or more. I am realizing thinking ahead for winter is way cheaper but I lack real organizational skills. ♀️

Know that working with Clear Jel (it’s a heat stable thickener) can be a little weird. It thickens fast and creates something that is best described as goo.
