hello, rhubarb brownies. this is part of my rhubarb dessert series but tbh even without the rhubarb these brownies stand on their own— they're fabulously thick, fudgy, and chewy, rivaling any non-vegan brownie I’ve ever had. the rhubarb softens when baked, forming this mellow tart layer that compliments the richness of the chocolate (also makes the brownies look 1000% fancier). recipe below, for the full version go to the clickable link in my bio! . Ingredients: 1 + 3/4 cup all-purpose flour ¼ tsp baking soda ¾ tsp salt 2 flax eggs (2 tbsp ground flax + 6 tbsp water) ¼ cup water 4 oz chopped semisweet chocolate (or semisweet chocolate chips), about 1/2 cup + 2 tbsp ½ cup cocoa powder 1 tsp instant espresso powder 1 cup turbinado sugar 6 tbsp vegan butter (sub coconut oil) 1 1/2 tsp vanilla extract 2-3 stalks fresh rhubarb, cut into 3-inch pieces and sliced lengthwise into matchsticks . Instructions: Preheat oven to 350°F and line an 8x8 inch baking dish with parchment paper. In a large bowl, combine flour, baking soda, and salt. Whisk together ground flax + water in a small bowl and set aside to thicken. In a small saucepan, heat 1/4 cup water. Once it reaches a boil, add in chocolate, cocoa powder, and espresso powder, stirring until chocolate chips/chunks are melted. Remove from heat and add sugar, butter, vanilla, and flax eggs, stirring vigorously until the mixture is smooth. Using a spatula, transfer contents of the saucepan into the flour mixture. Stir and fold until thoroughly combined and batter is glossy and very thick. Transfer to the baking pan, then arrange rhubarb on top, pressing the pieces lightly into the batter. Bake for 22- 25 minutes on the middle rack. Remove pan from oven and allow to cool completely on a cooling rack before cutting into squares. . Notes: - Instant espresso powder optional, but it really enhances the chocolate flavor. - I’ve made these brownies with 3/4 cup sugar and personally prefer that since I like my desserts to be less sweet. For traditional sweetness level stick to 1 cup. -To make gluten-free, substitute flour with 1:1 gluten-free all-purpose flour.

Il PASTICCIOTTO LECCESE è un dolce tipico del Salento di forma ovale e dal morbido ripieno di crema pasticcera racchiuso in una basa di pasta frolla #INGREDIENTI: Farina 50 g Latte 500 ml Uova 6 tuorli Vaniglia 1 baccello Zucchero 150 g Amarene 15 PREPARAZIONE: 1️⃣Iniziate preparando la crema pasticcera: in un pentolino scaldate il latte con la vaniglia. A parte unite lo zucchero e i 6 tuorli e sbattete energicamente, aggiungendo poi la farina setacciata
2️⃣A questo punto versate il composto nel latte, mescolate con una frusta e fate addensare. Ponete il tegame in frigorifero e fate raffreddare 3️⃣Prendete la pasta frolla e foderate gli stampini. Una volta raffreddata la crema versate 2 cucchiai all'interno dei pasticciotti e a piacere inserite un'amarena 4️⃣Chiudete quindi il vostro fagottino con un disco di pasta frolla e disponete gli stampini in una leccarda. Infornate a 180° per mezz'ora circa. Fateli intiepidire e servite
