cauliflower gnocchi + sautéed veggies (zucchini, onion, bell pepper, spinach) in @raoshomemade tomato basil marinara + fried eggs + microgreens + df chive cream cheese
i was completely restless last night so i will be zombie jeannette today at least a big bowl of oats to match my big eye bags and 4 cups of coffee should get my morning going in the right direction can’t say what will come by the time 3pm hits though
here’s the oatmeal recipe:
1/2 cup quick oats
1 cup almond milk
1 tbsp chia seeds
1/2 grated zucchini
1 scoop vanilla protein (optional)
1/2 banana (mashed)
sea salt to taste
1/2 tsp cinnamon
directions:
bring almond milk to a boil. stir in oats and chia seeds. reduce heat and continue stirring for about a minute. add in grated zucchini and banana. keep stirring and cook for 3-5 minutes. add cinnamon and sea salt right before removing from heat. when done, turn off heat and stir in vanilla protein
add toppings of choice!! i did plain skyr, peanut butter, blueberries, they rest of the banana, and chocolate chips ✌

recipe:
makes 16 bite-sized squares
1 cup cashews
1 cup quick cooking oats
4 soft dates
1 tbsp vanilla
4 tbsp hemp seeds
1.5 scoops vanilla protein powder
1/2 cup nut butter
1/2 cup @santabarbarachocolate chocolate chips
1/4 cup raisins
1 tsp cinnamon
sea salt to taste
3-5 tbsp almond milk to moisten the dough, but only do this after adding everything your dough to check how dry it is

blend the cashews & oats together until somewhat of a flour consistency. add the dates. blend for about 1 min. remove and add to a large mixing bowl. add the remaining ingredients. mix until well combined, adding however much almond milk is necessary to *just* moisten the dough
press the dough into a parchment lined loaf tin, sprinkle more chocolate chips and raisins, and freeze for about 20 mins. store in fridge for about a week or freezer for longer

recipe:
ingredients -
1/2 cup rolled oats
a small handful berries (i did blueberries and raspberries)
1 tbsp chia seeds
1/2 cup almond milk
1 scoop vanilla protein
1 tsp baking powder
1/2 mashed banana
1 tsp cinnamon
sprinkle of sea salt

directions - (i soaked my oats in the almond milk overnight for better digestion, but you don’t have to do this)
preheat oven to 400°. spray a ramekin or oven safe bowl/dish with avocado or coconut oil. mix all ingredients except berries in a bowl. pour oats into your baking dish. press berries into the top (leaving some visible). bake for 20-25 minutes or until a toothpick comes out clean. top with a splash of creamer and nut butter
i guess it’s safe to say, i like sweet potatoes
i also really like sweet potatoes cold, in a bowl, with fruit, nut butter, and granola

for the french toast you will need:
2 pieces bread (i used sprouted sourdough)
2 eggs
splash almond milk
1 tsp cinnamon
1 tsp vanilla extract
directions:
whisk ingredients together in a shallow bowl and soak both sides of bread in the egg wash
add butter to a warm skillet and cook until golden, then flip and cook the other side

i have this thing with kale. i strongly dislike it 98% of the time, hence why i never post anything containing kale. can’t even do it in a smoothie but @sweetgreen does something magical to it. is it a special kind of kale? do they chop it differently? idk but it’s the only time i ever eat it. and btw get your salad to-go, add your own avo at home, and boom $2 saved
this is a custom bowl: shredded kale, romaine, basil, red cabbage, sweet potato, chicken, spicy cashew dressing (if you know..you know) then it took it home and added avocado and sunflower seeds

overnight oat recipe: in a container mix together 1/2 cup oats, 1/2 mashed banana, 1 tbsp chia seeds, 1 scoop vanilla protein, 1 cup almond milk, pinch sea salt, 1/2 tsp cinnamon
in the morning add your toppings and dig in! i’ve been eating mine cold cuz summer is definitely here ☀️
