APPLE CRUMBLE MUFFINS
Makes 12
FREEZER FRIENDLY
INGREDIENTS
* crumble topping:
* ½ cup (45 grams) rolled (traditional) oats
* ¼ cup (40 grams) plain wholemeal (wholewheat) flour
* 3 tablespoons (60 grams) cold unsalted butter, cut into cubes
* 2 tablespoons (25 grams) brown sugar
* ½ teaspoon cinnamon, ground
* 1 tablespoon runny honey
* 1 tablespoon poppy seeds
* 1 tablespoon flaxseeds (linseeds) OPTIONAL
* 1 tablespoon (white or black) chia seeds
* pinch of salt
* muffins:
* 1¼ cup (190 grams) plain wholemeal (wholewheat) flour
* ½ cup (25 grams) wheat bran, toasted (or an extra 1/2 cup wholemeal flour)
* 2 tablespoons almond meal (almond flour)
* 1 tablespoon rolled (traditional) oats
* 1 tablespoon poppyseeds
* 1 tablespoon (white or black) chia seeds
* 1 tablespoon cinnamon, ground
* 1½ teaspoons baking powder
* ½ teaspoon bicarb soda
* pinch salt
* ¼ cup (50 grams) brown sugar
* ¼ cup runny honey
* ½ cup (125 ml) buttermilk (or natural yoghurt)
* ½ cup (125 ml) brown butter, slightly cooled (or lightly flavoured olive oil)
* 2 eggs
* 1 tablespoon vanilla bean paste
* 2 apples, grated (approx. 1 cup)
* 1 apple thinly sliced, to decorate
METHOD
1. Preheat oven to 180 C (350 F) and line a 12-hole muffin tray with papers. Set aside.
2. To make the crumble topping: Place all of the ingredients into a bowl and using your fingertips squeeze and press until the mixture is combined and resembles wet sand. Set aside in the fridge.
3. To make the muffins: Place the flour, bran, almond meal, oats, poppy seeds, chia seeds, cinnamon, baking powder, bicarb powder, salt and brown sugar into a large bowl. Whisk to combine creating a well in the centre. Cont below...

I’m so excited about my first keto baking win! Despite yesterday’s cookie flop (see previous post and please HELP!), these everything bagels turned out amazing. No hole? Yeah I know. I don’t have donut pans and don’t need them to look pretty. I just spread the egg and cheese mixture on a pan and cut them once cooked. Worked great! And these were so good. I used @traderjoes Everything But The Bagel seasoning and @lovemyphilly whipped cream cheese on top. I think these will become a staple!

Here’s a fun snack idea for the kids... Hummus & carrots with black olive ‘soil’ sometimes it's OK to play with your food especially if it encourages your children to try new foods...

I always try to involve my boys in the kitchen... they love getting their hands dirty and helping me cook... I like to think that when children are involved in the process of growing food themselves... digging it up... and cooking it... they will be more open to new ideas... so we try to grow a few veggies over the summer... tomatoes, salad, spinach and carrots are the easiest (I’m not green fingered!). All of these will grow in pots too if you have a city ‘garden’ like me! If only I could grow an avocado tree... maybe that would persuade them to eat it

My recipe for humous is simple. 1 tin of organic chick peas, 2 garlic cloves, 1 heaped tablespoon tahini, 4 tablespoons of extra virgin olive oil, juice of 1/2 a lemon . salt to taste. Blend until smooth & adjust thickness with a little more olive oil or water .
