Serves: 4-6
INGREDIENTS:
1.5 lbs sirloin steak, fat trimmed, diced into cubes just under 1-inch
1/3 cup low-sodium soy sauce
3 Tbsp honey
3 garlic cloves, minced (1 Tbsp)
2 Tbsp olive oil or vegetable oil
Green onions or sesame seeds, for garnish (optional)

Chicken and Rice!

Ingredients (for 5 servings)
5 chicken thighs
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon dried parsley
1 tablespoon olive oil
1 tablespoon garlic, minced
½ cup red onion, diced
1 cup long grain rice
1 ½ cups chicken broth
salt, to taste
pepper, to taste

Preparation
1. Preheat oven to 400˚F (200˚C).
2. In a large bowl, evenly season chicken thighs with salt, pepper, paprika, and parsley.
3. On high, heat olive oil in a oven-proof pot and place chicken thighs, skin-side down, in the hot oil. Cook 5-6 minutes or the thighs develop brown crispy skin and flip over.
4. Cook an additional 5-6 minutes to brown the other side and remove from the pot.
5. Add the garlic and onions to the pot, and cook until the onions are transparent.
6. Pour in the rice and chicken broth to the pot and season with salt and pepper. Stir well, bringing to a boil.
7. Add the chicken thighs back into the pot, skin-side up, on top of the rice, bring back to a boil and cover with a lid.
8. Bake for 35-40 minutes, or until the rice is fully cooked.
NOTE: For a crispy skin, remove chicken thighs and broil.
9. Enjoy!

Chicken asparagus twists!

Ingredients (for 12 serving)
2 boneless, skinless chicken breasts
1 teaspoon salt, divided
½ teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
6 tablespoons lemon juice, divided
6 strips bacon
12 stalks asparagus, ends trimmed
1 cup greek yogurt
3 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped

Preparation
1. On a cutting board, slice chicken lengthwise into 1-inch (2 cm) thick slices. Take each slice of chicken and cut it in half lengthwise leaving about 1 inch (2 cm) uncut on one end of the strip.
2. Cut off part of the uncut end of the chicken so you do not have a thick spot in the middle of your longer chicken strip.
3. Place chicken strips in a bowl. Add ½ teaspoon salt, pepper, onion powder, garlic powder, and 3 tablespoons lemon juice and mix to combine.
4. Transfer to the refrigerator.
5. Preheat oven to 400˚F (200˚C).
6. On a cutting board, slice each piece of bacon lengthwise creating 12 strips in total.
7. Wrap the cut strip of bacon around the asparagus.
8. Wrap a marinated chicken strip around the bacon-wrapped asparagus. Repeat with remaining ingredients.
9. Place each bacon chicken asparagus twist on a parchment paper-lined baking sheet.
10. Bake for 10 minutes.
11. Turn up the heat to broil, and broil for 10 minutes. Flip the twists over, and broil for an additional ten minutes.
12. In a bowl add the Greek yogurt parsley, dill, ½ teaspoon salt, and 3 tablespoons lemon juice. Stir until well combined.
13. Remove bacon asparagus twists from baking sheet, and let cool. Serve with herb yogurt dipping sauce.
14. Enjoy!

INGREDIENTS
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
2 teaspoon ground cumin
1 teaspoon chili powder
1/2 tsp dried oregano
Salt and pepper, to taste
3 cups shredded chicken
1 1/2 cup enchilada sauce
3 large zucchinis
2 cups Mexican blend cheese, shredded
Cilantro, avocados, jalapeño peppers, for garnish
INSTRUCTIONS
1. Preheat oven to 350°F.
2. In a large skillet over medium heat, heat olive oil. Add onions and cook until the soften. Add garlic, cumin, chili powder and oregano. Season with salt and pepper, and cook until fragrant, about 1 minutes. Add the cooked chicken and 1 cup enchilada sauce and stir until coated.
3. On a cutting board, use a Y-shaped vegetable peeler to peel thin slices of zucchini. Each zucchini should yield about 10 slices. Save the ends that are hard to peel for another use.
4. Lay out 3 slices, slightly overlapping, and top with a spoonful of chicken mixture. Roll up and transfer to a baking dish. Repeat with remaining zucchini and chicken mixture. It should yield about 25 total rolls.
5. Pour remaining enchilada sauce over the zucchini enchiladas and top with cheese.
6. Bake in the preheated oven until cheese is melty and enchiladas are warmed through, about 20 minutes.
7. Garnish with cilantro and avocados and serve immediately.

Have you tried the @beyondmeat burgers yet? -
This was my first time trying them and I honestly loved them, by far the most meat like vegan burger I've had. After spending 26 years not vegan and growing up eating beef I do enjoy the taste and familiarity of it. If that can be achieved without harming any animals then I'm in.

Anyone following me a long time will know I mainly recommend whole foods, but will occasionally try these products, especially if they are new or only recently available. I understand their place in helping people transition to a more plant-based diet, but whole foods first will always be the winner! -
