I use chicken thighs for 80% of my meal prepping because it works better than chicken breast. The reason for this is because of the fat content of the meat and how microwaves work. The way microwaves heat our food is through molecular friction from inside out. The microwave sends an electromagnetic wave into the box that holds your food. ⁣ ⁣ Inside of your food is water molecules. Every water molecule is a combination of two hydrogen atoms and one oxygen atom. If you recall from chemistry class, there are polar and non polar molecules. Water is a polar molecule meaning that it has a separation of electric charge with one side being negatively charged and one being positive. The positive side of the molecule will try to align itself with the electric field of the wave as it propagates, causing it to rock back and forth, creating molecular friction and heating your food. ⁣ ⁣ Chicken thighs have more fat which means more water and a more even heating which prevents the meat from drying out. Chicken breasts have much less fat and therefore water, so it’s harder to heat chicken breasts in the microwave. ⁣ ⁣ The water that is in the meat will be excited and heat up the area surrounding it but eventually that water can escape out the surface of the meat and evaporate. When you hear popping this is what is likely happening.
