SUSHI BURGER WITH VEGAN CHIPOTLE MAYO

Recipe:
Sushi Rice:
2 cups uncooked sushi rice
3 1/2 cups of filtered water
1 tbsp rice vinegar
1/2 tbsp cane sugar
1 tsp salt
2 tbsp sesame seeds
Fillings:
6 ounces baked flavored tofu (I used the Indian curry flavor)
2 avocados, sliced
1/4 purple cabbage, sliced thinly
2 carrots, sliced thinly
1 cucumber, sliced thinly
3 oz pickled ginger (optional)
Chipotle cashew “mayo”: 1/2 cup raw cashews
1/4 – cup water
2 tbsp nutritional yeast
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/2 tsp onion powder
juice of 1 lemon
1-2 chipotle peppers from a can of chipotles in adobo (You can also remove seeds for a less spicy mayo)
INSTRUCTIONS:
1. Rinse the rice in a strainer or colander until the water runs clear.
2. Combine with water in a medium saucepan. Bring to a boil, the reduce the heat to low, cover and cook for 20 minutes. (Feel free to use a rice cooker!) Rice should be tender and water should be absorbed. Transfer the rice to a large bowl to let cool for 10-15 minutes. *Recipe continued in comments! PRO TIP One of my favorite ways of naturally boosting protein intake is with lentil or bean pasta. We’re obviously huge Mac n cheese fans, so instead of eating refined carbs, we love getting a whole bean version. There are lots of varieties at the minute, red lentil, black bean, chickpea, plus soy based ones, all with higher protein than regular flour pasta. -

Black Bean & Corn Veggie Bowl

Have been very fortunate with my current travels that I have been able to find a lot of vegetable heavy dishes that are both satisfying and delicious. Makes me eager to get back into the kitchen and share how these experiences will now impact my future recipes. ☺️ Until then, thinking about making this bowl again. Black beans mixed with corn and lots of veggies is always a winner. I paired it with some avocado and mixed brown rice I got from Trader Joe’s and cooked it with some fennel seeds to make it super flavorful. Perfect for main meals or 2-3 prepped lunches for the week.

Black Bean Corn Salad
1 can black beans, rinsed and drained
1 cup fire roasted corn
1/2 cup diced cherry tomatoes
2 tbsp fresh basil, minced
1 tbsp red wine vinegar
1 tsp dry oregano
1 tsp Chile lime seasoning (got it from Trader Joe’s)
1/2 tsp garlic powder

Place all ingredients in a bowl and mix together to combine. Adjust seasonings as desired then serve. One bowl dishes are the best.

1/2 cup fresh basil
Juice from 1 lemon
1 tbsp whole grain mustard
1 1/2 cup peas
For the pasta:
Enough cooked pasta for 4
1 cup peas
1/3 cup sun dried tomatoes
Lemon juice
Fresh basil to top
