|Pesto Zucchini Noodles with Tomato Mango Salsa| This recipe is adapted from multiple Medical Medium recipes.
I’ve eliminated fat from my diet (for the most part) but I’ve had 1 avocado once a month for the past 3 months. I’ve also continued to run up and down this mountain every day for the past 3 months. I have never felt better, and my body is finally shrinking which tells me that all the work I’ve done over the past 16 months is healing my liver. Lowering fat intake is key. It’s not been that challenging. My cream sauces usually consist of raw yellow squash, zucchini, or celery as the base. Add lemon juice, fresh garlic, and a couple dates and you’ve got a basic mayo or cream sauce. Add fresh herbs and spices to your taste. .
Pesto:
3 peeled zucchini’s
2C basil leaves
2 tbsp hemp seeds
4–5 dates
2-3 cloves garlic
Juice from 1 lemon
1/4 tsp sea salt
1/4C water

Blend until smooth and mix into zucchini noodles.

Tomato Mango Salsa:
2C mango, diced
2C tomatoes, diced
1/2C onion, minced
1 lime, juiced
1/4C cilantro leaves, minced
1 tbsp jalapeno, minced
Combine ingredients and add to pesto noodles, potato rounds, or salad greens

It's okay to eat simple meals... When I first went vegan, I was on a mission to make a vegan version of all my favorite recipes.
Vegan cauliflower wings, vegan lasagna, vegan Mac and cheese, vegan pizza... Now don't get me wrong, I still like these foods... sometimes.
I thought that the only way I could stick with plants was by creating all these fancy meals.
The longer I eat this way, I continue to feel healthier and with more energy, I'm getting stronger, my perspective and values change, and... I've realized that simple meals are what my body likes most.
Foods that my body craves most are greens, celery, potatoes and juicy fruits.
This morning I had grapes and now I'm eating this... Mashed potatoes with Spinach, mushrooms and tomatoes.
The potatoes are 2 medium sized Yukon Gold that I cooked in the insta pot for 7 minutes.
While those were cooking, I sauteed the mushrooms and spinach.
Simple. Healthy. Cheap. Satisfying.
It's okay to eat simple food. Not everything has to be a masterpiece.
