Vegan BBQ Lentil Sloppy Joes Created by @monkeyandmekitchenadventures ‍‍ ⠀ Shared Via @GlowingPlants ✨ #GlowingPlants ⠀ ⠀ Recipe ⠀⠀ Dry Lentils Ingredients:⠀⠀ ¾ cup dry small brown lentils, picked through and rinsed⠀⠀ 1 cup water⠀⠀ 2 cup vegetable broth⠀⠀ 3 Tablespoons tomato sauce⠀⠀ ⠀⠀ Sloppy Joes Ingredients:⠀⠀ 1 medium yellow onion, small dice⠀⠀ 1 green bell pepper, small dice⠀⠀ 1 celery rib, small dice⠀⠀ 2 Tablespoons garlic, finely minced⠀⠀ 1 cup tomato sauce⠀⠀ ¼ cup water⠀⠀ 1 Tablespoon tamari⠀⠀ ½ teaspoon liquid smoke⠀⠀ 2 teaspoons apple cider vinegar⠀⠀ 3 Tablespoons + 1 teaspoon organic maple syrup⠀⠀ 1 Tablespoon molasses⠀⠀ ⠀⠀ Sloppy Joes Seasonings/Spices:⠀⠀ 1 teaspoon onion powder⠀⠀ 1 teaspoon garlic powder⠀⠀ 2 Tablespoon dried minced onion flakes⠀⠀ ½ teaspoon sweet paprika⠀⠀ 1 ½ teaspoons smoked paprika⠀⠀ ¼ teaspoon cumin⠀⠀ 2 teaspoons chili powder⠀⠀ ½ teaspoon ground mustard⠀⠀ 1 teaspoon sea salt⠀⠀ ¼ teaspoon black pepper⠀⠀ ⠀⠀ Other Optional Ingredients:⠀⠀ Buns or wraps⠀⠀ Sweet and Tangy Vinegar Coleslaw⠀⠀ ⠀⠀ Instructions:⠀⠀ Cook the lentils on the stove top or in an instant pot until tender. See notes for lentil cooking instructions.⠀⠀ In the meantime, measure out all the dry spices into a small bowl, mix well. Set aside.⠀⠀ In a large ceramic/enamel-lined Dutch oven, skillet, or similar stock pot, add the onion, green bell pepper and celery; sauté over medium heat. Place the lid on the pot until they begin to softened, approximately 5 to 7 minutes. Add a tablespoon or so of water or broth if they start to stick and/or to prevent burning.⠀⠀ Add the minced garlic and sauté for 30 seconds, add the dry spices (sweet paprika, smoked paprika, cumin, chili powder, ground mustard, onion powder, garlic powder, dried minced onion flakes, black pepper and sea salt), sauté to release their fragrance, about 30 seconds to one minute.⠀⠀ Then add the water, tamari, liquid smoke, tomato sauce, molasses, apple cider vinegar, maple syrup, and cooked lentils; bring to boil, then immediately lower to a simmer. Simmer for 15 minutes, stirring occasionally until the mixture is thick⠀ Enjoy

Requeijão de Tofu @veganoides (ou “tofupiry”) Está aí uma bela opção de pastinha vegana, que dá para substituir numa boa os produtos derivados de leite (de origem animal, como queijo e requeijão). Desta vez, fizemos com tofu e ficou sensacional! Um dos pontos interessantes a se observar é que tofu é feito com soja. A maioria da soja produzida no Brasil é transgênica (cerca de 96,5%, segundo a consultoria Céleres), porém, alguns poucos locais podemos encontrar a soja orgânica, além de produtos e o tofu é um deles. O que usamos: ➡️200g de tofu orgânico ➡️ azeite de oliva extravirgem ➡️ ½ dente de alho ➡️ sal ➡️ suco de 1 limão ➡️ pimenta do reino ➡️ 1 pitada de cúrcuma ➡️ 1 pitada de curry masala Como faz: Bata no liquidificador todos os ingredientes até virar uma pasta. Mexa com uma colher caso tenha dificuldade de misturar no liquidificador. Experimente bater com ervas e temperos como salsinha, cebolinha, manjericão, coentro, para saborizações diferentes. *Lembrando que a soja é um alimento muito nutritivo, contendo alto nível de proteína. Esse grão e seus derivados devem ser consumidos com moderação e sem exageros. Por isso dá para intercalar diversas pastinhas que vamos dando dicas por aqui. Spicy steamed dumplings by @woon.heng via @vegangotgame #vegangotgame Recipe Ingredients: ~ 2 lbs of bok choy, washed and julienned ~ 1 package of wonton/dumpling wrapper ~ 1 box of firm tofu, drained & mashed ~ 1/4 cup of saute mushrooms ~ 1 tablespoon black bean sauce ~ 1 tablespoon corn starch ~ salt to taste ~ oil Spicy sauce (whisk all ingredients in a bowl until sugar dissolves): ~ 3 tablespoons soy sauce ~ 2 tablespoon chili oil with chili crumbs ~ 1 tablespoon sesame oil ~ 1 teaspoon Chinese black vinegar ~ 1 teaspoon grated ginger ~ 1 teaspoon sugar Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl. Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, cornstarch, combine well & season if needed. Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.

Fluffy Vegan Vanilla Crêpes filled with Coconut Yogurt, Raspberries, Sliced Strawberries, Pomegranate Seeds and Peanut Butter drizzle on top Who‘s in? ‍♀️‍♀️‍♀️‍♀️‍♀️‍♂️‍♂️‍♂️‍♂️‍♂️ Created by the beautiful @biancazapatka __ Shared Via @GlowingPlants ✨ #GlowingPlants __ Recipe Crêpes: * 1 cup all purpose wheat or spelt flour (125 g) or sub gluten-free flour * * 1 tsp baking powder * 2/3 cup plant-based milk (160 ml) * 1/3 cup sparkling water (80 ml) or more milk * 1 flaxseed-egg * optional * 1/2 tsp ground vanilla * (sugar or agave syrup to taste *) optional * coconut oil for frying Topping & Filling * Coconut Yogurt, Strawberries, Pomegranate Seeds, Peanut Butter, Rasberries and whatever you desire Instructions * To make the flaxseed-egg stir 1 tbsp ground flaxseeds in 3 tbsp hot water. Let soak for approx. 5 minutes until jelly. * Mix flour, baking powder and vanilla in a bowl. Then make a well in the middle and add the plant-based milk, water, flax egg and stir. Set aside for 5-10 minutes. (The batter should run easily off a spoon, add a little more water or milk, if it’s too thick.) * Heat up a non-stick pan on a medium heat. Brush the pan with a tiny bit of oil to make sure that the crêpes do not stick. * Pour 1/2 - 1 laddle full of batter into the pan and smooth it out well to form a big round pancake. Cook for about 1-2 minutes until bubbles appear and the pancake no longer sticks to the pan. Flip to the other side and cook for another minute or so until golden. * Fold cooked crêpes. Then spread coconut yogurt on top with sliced berries, peanut butter and pomegranate seeds and roll them up. * Once ready to serve, drizzle more coconut yogurt over your crêpes with fresh berries or other fruits and desired toppings * Enjoy

SUSHI BURGER WITH VEGAN CHIPOTLE MAYO Follow @knowingfood fot more! Recipe: Sushi Rice: 2 cups uncooked sushi rice 3 1/2 cups of filtered water 1 tbsp rice vinegar 1/2 tbsp cane sugar 1 tsp salt 2 tbsp sesame seeds Fillings: 6 ounces baked flavored tofu (I used the Indian curry flavor) 2 avocados, sliced 1/4 purple cabbage, sliced thinly 2 carrots, sliced thinly 1 cucumber, sliced thinly 3 oz pickled ginger (optional) Chipotle cashew “mayo”: 1/2 cup raw cashews 1/4 – cup water 2 tbsp nutritional yeast 1 tsp salt 1/2 tsp pepper 1 tsp garlic powder 1/2 tsp onion powder juice of 1 lemon 1-2 chipotle peppers from a can of chipotles in adobo (You can also remove seeds for a less spicy mayo) INSTRUCTIONS: 1. Rinse the rice in a strainer or colander until the water runs clear. 2. Combine with water in a medium saucepan. Bring to a boil, the reduce the heat to low, cover and cook for 20 minutes. (Feel free to use a rice cooker!) Rice should be tender and water should be absorbed. Transfer the rice to a large bowl to let cool for 10-15 minutes. *Recipe continued in comments!
