Cheese Poppers A melt-in-your-mouth treat, which does not melt from your memory forever! These exciting Cheese Poppers feature herbed cheese slice rolls that are batter-fried to perfection. Preparation Time: 10 mins Cooking Time: 15 mins Total Time: 25 mins Makes 15 pieces (15 piece ) Ingredients 5 amul cheese slices 3/4 cup plain flour (maida) 1 1/2 cups fresh bread crumbs oil for deep-frying To Be Mixed Into A Herbed Mixture 1 tsp dried mixed herbs 1 tsp dry red chilli flakes (paprika) salt to taste 1/4 tsp freshly ground black pepper (kalimirch) For Serving schezuan sauce Method Combine the plain flour and ¾ cup of water in a deep bowl and mix well to make a smooth batter. Keep aside. Divide the herbed mixture into 5 equal portions and keep aside. Place a cheese slice on a flat, dry surface and place 1 portion of the herbed mixture at one end of the cheese slice and roll it up tightly. Cut the cylindrical roll into 3 equal pieces. Repeat steps 3 and 4 to make 12 more poppers. Dip each piece in the plain flour batter and roll it in bread crumbs till they are evenly coated from all the sides. Repeat this procedure once more with each piece so as to seal the herbed mixture in the cheese slice properly. Heat the oil in a non-stick deep pan and deep-fry them, 3 at a time, till they turn golden brown in colour from all the sides. Peri Peri Chicken Follow @thebriskkitchen Ingredients Cornflour - 2 tablespoons Maida - 2 tablespoons Salt - 1/2 teaspoon White pepper - 1/2 teaspoon Water - 50 ml Chicken - 150 gm Cooking oil - 150 ml Cooking oil - 2 tablespoons Chopped garlic - 20 gm Chopped ginger - 20 gm Chopped onion - 10 gm Chopped green chilli - 1 Water - 100 ml White pepper - 1/2 teaspoon Salt - 1 tablespoon Red chilli sauce - 1 teaspoon Schezwan sauce - 2 tablespoons Peri peri sauce - 1 tablespoon Cornflour (1 tablespoon) mixed with Water (10 ml) Chopped spring onion - 1 tablespoon Preparation In a mixing bowl add cornflour, maida, salt, white pepper and water. Mix well. Add the chicken pieces and mix well. Shallow fry the chicken till golden, and keep aside. In a pan heat oil. Add chopped garlic, ginger, onion and green chilli. Sauté. Add water and mix well. Add white pepper, salt and red chilli sauce. Mix well. Add schezwan sauce and pei peri sauce. Mix well. Add cornflour+water mix and mix well. Spoon in diced avocado, tomato salsa, filling, lotsa cheese and diced peppers. Sprinkle of mixed herbs and paprika. Bake in oven till cups are crisp. Serve! _ These are made fresh. If your filling is cooked and ready, you're ready to go. Takes 2 minutes to assemble. Preheat your oven whilst filling the cups and pop in to crisp up. It's that simple! _ A chicken or beef filling could be used. If you cannot find the mini tortillas, then you may cut out 3 circles from a large tortilla/wrap. Save the recipe for a fast Iftar idea! Steak Tortilla Cups Rec Cred: Ruhana Ebrahim Pic cred: @mama_taught_me_well Ingredients: Grated cheddar/mozzarella cheese 2dzn mini tortillas 1 avocado (cubed) 1 tablespoon lime juice Filling- 500g rump steak (cubed) 1 tablespoon oil 1 teaspoon red ginger garlic masala 1 teaspoon crushed garlic 1 teaspoon dhana jeeroo powder 1 teaspoon salt 1 tablespoon lime juice 1 tablespoon mayonnaise 2 tablespoon Sriracha sauce 1 cup frozen corn 1 red pepper (diced) Salsa- 2 large tomatoes (cubed) 1 small onion (chopped) 1/2 tsp salt 1/2 tsp pepper 1/2 tsp chilli powder 1/2 tsp dhana jeeroo powder Pinch turmeric powder Method: 1. Heat oil for filling, add spices, ginger garlic masala and garlic. Braise for few seconds then add steak and lime juice. 2. Cook till half done, then add corn and peppers. 3. When almost done add sauces and cook till dry. 4. After cubing avo, toss with some lime juice so does not brown. 5. Saute onion in oil for salsa. Add tomatoes and remainder ingredients and cook till tomatoes have softened and reduced. 6. Spray 'and Cook a cupcake pan. 7. Slightly warm tortillas in microwave so that you may easily shape into cupcake pan. 8. Spoon in avo, salsa, steak filling. 9. Then sprinkle on cheese, dried mixed and pinch paprika on each cup. 10. Bake in oven till shell is crispy. Remove, cool for a minute and serve.
