Are you worried about whether your child is eating enough at dinner? Or if they will be able to make it through the night without getting hungry? I get asked a lot if I recommend a bedtime snack, and as always, the answer is: it depends!⁠⠀ ⁠⠀ Every child is different, and you are the only one that can really tell if they need a bedtime snack or not. But here are some things to think about when deciding! (These really go for kids after 1 at a minimum- prior to that breastmilk or formula is your go to!) If your child is generally not eating a lot at dinner, and they aren't front loading their calories (meaning they aren't eating a big breakfast or snack to make up for not eating later) then a bed time snack can definitely be a consideration.⁠⠀ ⁠⠀ When it comes to eating dinner or not, remember that you get to decide what is served and when. They get to decide if they want to eat it or not, and how much of it to eat. It is okay if they decide not to eat dinner! Aim for serving one safe food at each meal that you can reasonably expect them to eat. If they don't eat that, then they likely weren't hungry. We don't want to be serving bedtime snacks and encouraging kids to use it as a made to order meal of food that they want instead of what you served.⁠⠀ ⁠⠀ Instead, think of it as just another eating opportunity. I generally recommend it to be pretty plain jane everyday food. Avoid foods that are exciting so that your child doesn't hold out for snack. Use it as a way to get in something that they didn't get a lot of during the day (iron, calcium, fat, etc!).⁠⠀ ⁠⠀ If you decide to do it, commit to it and always offer it- at least after the first few times to experiment with whether it works for you or not! You can always just offer the option by asking them if they would like a bedtime snack that night. But do not give them the option of choosing what to have! You still decide what is on offer!⁠⠀ ⁠⠀ And keep in mind, it is okay for them to be a little hungry when they wake up! They won't starve, promise. So often, waking in the middle of the night isn't actually for hunger reasons (even though they want you to believe it is!) but is actually more of a sleep habits iss

TWO YEAR OLD EATS! Cooked salmon and roasted broccoli on two sheet pans at 400 for 15 minutes (see details in stories) for the family. Threw in some fruit and some rice from a big batch we cooked a few days ago, and that about wraps it up. She may eat all of it, or only nibble. Chances are, most will be eaten before bedtime, and much more is eaten if I’m sitting with her eating the same things. She asked for “isceam” (ice cream) right when she got to the table, and I said not today. She did the toddler thing. Got over it and eventually ate. If she’s still hungry later, I’ll add more or give her some grass-fed yogurt. Keeping it simple because tonight is my first time doing dinner and bedtime solo with a toddler and newborn. Pray for us. #toddlereats

“Picky eater tips” are great but who really needs some tips during this phase is us, THE PARENTS! Being the parent to a “picky” or selective or fussy eater can be both mentally and emotionally exhausting! I’ve talked to some parent who tell me how meals are the most frustrating part of the day. Or moms who cry themselves to sleep because they are so exhausted and frustrated. And every story breaks my heart But that’s who I am here for! YOU, the parents, step parents, grandparents, aunts, uncles, nannies, babysitters, child care providers, and anyone else who helps care for these precious little people! The first step to helping your little ones eating habits actually starts with YOU! Yes you. The adult! It starts with changing YOUR perspective of your child’s eating habits. Start approaching every meal out of CURIOSITY to see what happens, rather than determination to make them eat everything. When your child does try a new food, be optimistic about it even if they do not enjoy the new food. Make eye contact, smile, clap, and show them that what thye are doing is making you happy! Try to avoid being negative about that food experience as that might discourage them from trying it again. Using dissapointment or anger when your child doesn’t eat will only create a negative imprint for your child during meal times. Count every small thing as a win! Every touch, lick, nibble, crunch, smash, and interaction with a food is important! Once you start counting the little wins and not focusing so much on the negatives- you will begin to find more joy in meal times.

Along with a chance of winning a plate for yourself too! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Have you entered the competition yet? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients; ⠀⠀⠀⠀⠀⠀ • 1 Courgette (zucchini) grated, and the juice squeezed out • 1 medium egg ⠀⠀⠀⠀⠀⠀ • 60g of self raising flour ⠀⠀⠀⠀⠀⠀ • 1 teaspoon of baking powder ⠀⠀⠀⠀⠀⠀ • A large handful of grated cheese ⠀⠀⠀⠀⠀⠀ • 60ml of your milk of choice ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method; ⠀⠀⠀⠀⠀⠀ 1) Add all the ingredients to a bowl and mix till well combined ⠀⠀⠀⠀⠀⠀ 2) Fry tablespoon sized amounts of the mixture in a non stick pan with a little drizzle of oil, for a couple of minutes on each side. Keep the heat to a medium so the fritters cook through without burning on the outside. ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ You can make these fritters #vegan by replacing the egg for a #flaxegg (1 tablespoon of ground flax to 2.5 tablespoons of water) - and substituting the cheese for couple of tablespoons of nutritional yeast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ To make the chicken I coated a load of thighs in 2 teaspoons of smoked paprika, a tablespoon of garlic infused oil, 1 teaspoon of mixed dried herbs and a good grinding of black pepper. I then baked in a hot oven for 25 minutes. ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ These fritters are suitable from 6 months. Cut into strips before serving. Serve corn on the cob in discs as pictures from around 7 months. ⠀⠀⠀⠀⠀⠀ ❄️ You can freeze the fritters for up to 3 months, defrost thoroughly and reheat in the microwave or back in the frying pan. ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Suction plate - Gifted.

C H E E S Y • Z U C C H I N I • P I E Is there anything more comforting than a delicious, jam- packed pie covered in flaky puff pastry ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This hidden veg filled dish, took me just 15 minutes to put together, and then I let the oven do it’s thing while I put my feet up! (I’m not fooling anyone am I? - I tidied up Nina’s toys! ) ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Simply make a cheese sauce with lots of grated courgette for added veg, and then you can add any fillings you like. Today I used left over roast chicken and a couple of hard boiled eggs, but you could try butternut squash, or broccoli would be delicious!! What will you fill yours with? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ P.s keep an eye out on my stories later this evening.. you won’t wanna miss my exciting news!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients; ⠀⠀⠀ • 2 medium courgettes, grated ⠀⠀⠀⠀⠀ • Freshly ground black pepper ⠀⠀⠀⠀ • 2 tablespoons of corn flour ⠀⠀⠀⠀ • 300ml of milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 150g of grated cheddar cheese ⠀⠀ • A small knob of butter ⠀⠀⠀⠀⠀⠀⠀ • Half a packet of ready roll puff pastry ⠀ • 1 low salt stock cube ( I used @mylittlepiccolo kindly gifted) ⠀ • 1 egg or more milk ⠀⠀⠀ • Your chosen pie fillings. Today I used the meat of 3 cooked chicken thighs and two chopped hard boiled eggs. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method; ⠀⠀ 1) Grate your zucchini, and add to a saucepan with a small knob of butter, cook for 4 minutes. ⠀⠀⠀⠀ 2) Add your cornflour and cook for a minute then add your stock cube, milk and black pepper. Keep stirring till thickened, around 5 minutes. ⠀⠀ 3) Add your cooked pie filing to the sauce along with the cheese, stir and transfer to a oven dish. ⠀⠀⠀ 4) Top with pastry, cut a hole in the middle to allow steam to escape, and brush the pie with beaten egg or milk to glaze. Bake at 200 degrees for 25 minutes until golden and puffed up! ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This meal is suitable from 6 months. Ensure the pastry and any pie fillings are cut into strips so easy for baby to hold. Alternative you can mash and offer on a spoon. ❄️ You can also make two small pies and freeze one for a rainy day. I actually put the heating on today.. it’s JUNE! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s the weather doing where you are? I hope it’s lovely and warm for you! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients; (serves 3) ⠀⠀⠀⠀⠀⠀ • 200g of dried pasta ⠀⠀⠀⠀⠀⠀ • 3 boneless & skinless chicken thighs or two small chicken breast⠀⠀⠀⠀⠀⠀ • 150g of cheddar cheese, grated ⠀⠀⠀⠀⠀⠀ • 1 garlic clove, crushed ⠀⠀⠀⠀⠀⠀ • A good grinding of black pepper ⠀⠀⠀⠀⠀⠀ • A tablespoon of corn flour (or plain flour)⠀⠀⠀⠀⠀⠀ • 250ml of your choice of milk ⠀⠀⠀⠀⠀⠀ • Half a head of broccoli cut into small florets ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method; ⠀⠀⠀⠀⠀⠀ 1) Get your pasta on to boil and a separate frying pan on the heat to start warming up. ⠀⠀⠀⠀⠀⠀ 2) Cut the chicken into strips and add to the frying pan with a teeny drizzle of oil. ⠀⠀⠀⠀⠀⠀ 3) Cook on all sides for around 4/5 minutes until the chicken has just cooked and then add the corn flour and garlic to the pan and stir for 30 seconds to let the flour cook out. 4) Add the broccoli to the pasta pan and cook for the remaining 5 minutes. ⠀⠀⠀⠀⠀⠀ 5) Add the milk and black pepper to the chicken and keep stirring & cooking for around 5 minutes until the sauce has thickened. Now add the cheese and let it melt into the sauce. ⠀⠀⠀⠀⠀⠀ 6) Your pasta and broccoli should be cooked by now, reserve a small amount of the cooking water and drain. Add to the sauce along with a little dash of the water if the sauce is too thick. Toss and stir together and serve with an extra grating of cheese on top. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This dish is suitable from 6 months. As promised, I will be making ‘What My Toddler Ate In A Day’ a regular (weekly) thing! This was Zayne’s Food day from earlier in the week. Toast and fruit is a fave though, so no complaints! I added hemp seeds for extra iron, protein and fat ———————————————— ➡️Snack: 10am ▪️Full Fat Greek Yoghurt & Mango - Super simple but nutritious morning snack. @fage Greek yoghurt is so thick and creamy, my kids tell me it’s like eating dessert! (not sponsored) ———————————————— ➡️Lunch: 12:30 ▪️Kale Pesto Chickpea Pasta ▪️Sliced Tomato ▪️Mozzarella Cheese - I add kale to my pesto for added nutrition and texture and my kids love it. They’re actually not huge kale fans but can hardly taste it because of the basil. I didn’t sneak it in, they knew it was there! ———————————————— ➡️Snack: 3:30 ▪️Lemon & Raspberry Oat Muffin ▪️Veggie Frittata Fingers - Freezer stash raid for his afternoon snack. We went out after lunch so I popped these in his snack box before we left and they were defrosted by snack time. A nutritious snack with zero effort! ———————————————— ➡️Dinner: 6:00 ▪️Lemon Garlic Butter Chicken ▪️Roast Potatoes ▪️Braised Purple Cabbage ▪️Steam Roasted Veggies - I prepped most this meal earlier in the day so it was just a case off popping things in the oven when we got back in the late afternoon. E n c h i l a d a L a s a g n e Happy Wednesday! Hope you’re all having a lovely week so far. I made us all Enchilada Lasagne for dinner this evening inspired by a recipe that I saw over on @pinchofnom’s Facebook page, but I changed a couple of things. The recipe is over on my stories and will also be added to my recipe highlight if you would like to try it out. It was a huge hit in our house and everyone demolished the lot, it’s also delish with a dollop of sour cream.
