Vegan chocolate chip cookies by @wearesovegan. Recipe:
100 g coconut oil
100 g brown sugar
50 g white sugar
75 ml almond milk
50 g applesauce
1 tsp vanilla extract
250 g plain flour
1 tsp baking powder
100 g vegan chocolate chips
50 g vegan dark chocolate
1. Transfer the coconut oil and sugar to a mixing bowl, and stir until fully combined.
2. Add in the almond milk, applesauce and vanilla extract to the mixing bowl, and stir. Then add in the flour and baking powder, and fully combine.
3. Prepare the chocolate chunks by finely chopping the dark chocolate with a knife. Then stir in the chocolate chips and the chocolate chunks into the cookie dough, and mix until evenly distributed.
4. Chill the cookie dough in the refrigerator for 30 minutes.
5. Meanwhile, preheat the oven to 180°C or 350°F and line a large baking tray with baking paper.
6. Remove the cookie dough from the refrigerator and spoon the dough onto the baking tray using an ice cream scoop or a tablespoon, leaving a couple of inches between each spoonful.
7. Bake for 10 - 12 minutes in the preheated oven, turning the tray around halfway through baking if the cookies are browning more on one side than the other.
8. Leave the cookies to rest on the baking tray for 5 mins, then transfer to a cooling rack.

VEGAN S’MORES COOKIES
1 1/4 cup all purpose flour
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
2/3 cup coconut or cane sugar
1/3 cup melted liquid coconut butter
5 tbsp cup warm water
1/3 cup Alter Eco chopped dark chocolate
1/2 cup mini vegan marshmallows .

Preheat your oven to 350*F. Whisk together the flour + salt + baking soda + baking powder in a medium bowl and set aside. In another bowl, mix together the sugar and melted oil, and then add in the warm water. Add this wet mix to the dry mix and mix until combined. Fold in your chocolate and marshmallows , and on two parchment lined trays, roll out your cookie dough balls and place on trays. Make about 16 cookies and pop them into the oven for around 12 minutes. Then, develop some super human restraint so that you let them cool, rather than burning your tongue.
Melty Chocolate, Melty Marshmallows (used Dandies vegan ones) enveloped inside a sweet cookie to take you to cookie heaven.

5-Ingredient Blueberry Oatmeal Cookies, this time with a lil’ video on how easy they are to make (swipe to see ), I just can’t get enough of these with the bursting blueberries and soft chewy middle
2 large bananas
2 tablespoon almond butter
1 scoop vanilla protein*
1 cup oats
1/2 cup blueberries
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pre-heat the oven to 180ºC/350ºF and line a baking tray with baking paper.
Peel the bananas, add them to a bowl, and mash them with a fork or potato masher. It doesn’t have to be completely smooth, but it shouldn’t be too lumpy either.
Mix in the almond butter, then vanilla protein and oats until it’s fully combined and not clumpy. Fold in the blueberries.
Spoon roughly two tablespoons of batter into the lined baking sheet. That makes one cookie, so repeat until there is no more batter left. Should be around 6 cookies total.
Use the back of a spoon to shape them into nice little circles, and bake for 12-15 minutes.
Remove from the oven, let cool, and enjoy! I like to drizzle some peanut butter on top just to be extra

*If you don’t have or want to use protein, sub for ground vanilla or extract plus 1 1/2 tablespoons extra oats and sweetener of choice (or omit and keep use the banana for sweetness)
