I made these the other day with a brownie cheesecake sort of thing in mind. But after it was done, & my best friend & I got our taste testing on, we realized this ish tastes JUST like Rocky road.. & so it was born. Raw vegan rocky road slice! Raw brownie based bottom (full of them omegas from walnuts ♀️) + a cacao brownie chunk cheesecake layer + topped with my fave 2 ingredient @eatingevolved chocolate ganache. Little chunks of the raw brownie were pulsed into the cheesecake layer & it’s unreal you guys.. & as always, no refined sugar = the best part! I hope everyone has the best weekend. Thomas & I will be in Seattle participating in a fundraiser walk that benefits funding for Ewing Sarcoma (the cancer he was diagnosed with) & I’m so excited. It’s always humbling being around other survivors & hearing their stories what are your plans!?

Lack of sleep, lack of motivation, headaches; this has been such an off week for me! I have no idea what’s been going on. Buuuut, instead of getting down on myself, I’m implementing things that will help get me back on track & keep spirits high! Yesterday, that definitely included some best friend time, a plate of nachos the size of my head, a movie (we saw pet semetary. Uhhh scary), & of course some kitchen time, because a fridge full of goodies can always brighten my mood.. & belly I try to sit back & express gratitude for what I’ve got - thomas is cancer free, were healthy, I can move my body, my friends & fam, I have this incredible community that im forever thankful for, & beautiful yummy food to fuel myself with. what do you guys do when you’re having off weeks & to keep motivation high? I love the input! ;)

Creamy chia pudding and lime matcha nicecream via @oatmeal_stories (makes 2 servings)
Chia pudding
1/4 cup chia seeds
1 cup oat milk
1 tsp maple syrup
1 tsp vanilla extract
Place all the ingredients in a jar and mix well. Mix few more times in the first 10 minutes to avoid lumps. Place in the fridge and let soak for one hour.
Matcha lime nicecream
3 frozen bananas
1 tsp matcha powder
juice of one lime
Place all the ingredients in a food processor and blend until smooth and creamy.
Enjoy!

Matcha cheesecake with buckwheat ginger chocolate crust via @365cleaneats

Recipe: 20cm (8”) tart tin with removable bottom
■Crust:
•Dry:
90g buckwheat groats (or GF rolled oats)
90g raw almonds
6 Tbsp. coconut sugar
2 Tbsp cocoa powder
1 tsp ground ginger
1/4 tsp pink salt
•Wet :
5 Tbsp. melted coconut oil
.
■Matcha cheesecake Filling:
200g raw cashews (soaked 4-6 hours and rinsed)
1/2 cup (120ml) coconut cream
6 Tbsp. (60g) melted raw cacao butter
7 Tbsp. maple syrup
5 Tbsp. lemon juice
1/2 tsp lemon zest
4 tsp matcha powder
pinch of pink salt .

*You can substitute maple syrup & coconut cream with raw agave & raw nut milk for raw filling version.
*Bitterness and colour of matcha powder vary. Please adjust the amount of the powder according to preference.
.
■Method:
(1) Preheat oven to 170⁰C. Place every dry ingredient for the crust in a food processor. Process well until it reaches the consistency of flour
(2) Add melted coconut oil into the food processor and process until it becomes like wet sand (3) Press the mixture against the sides and the bottom of the tart tin. Bake it for about 15-20 minutes or until baked through. After it has cooled down, put it in the freezer for 30 minutes to an hour.
(4) Put every ingredient for the matcha layer in a high-speed blender and blend well. Add more sweetener or lemon juice if you want. Layer it over the crust and freeze it overnight.
(6) Take out the cake from the tin and garnish with fruits.
