Croissant Filled With Chocolate Pudding and Berries! by @miss_gruenkern Follow @vegancanteen for more awesome vegan recipes! #vegancanteen Chocolate Pudding Recipe: 1 (13oz) can full fat coconut milk 1 1/4 cups unsweetened almond milk 3 Tbsp unsweetened cocoa or cacao powder 4 Tbsp arrowroot starch/arrowroot flour 1/3 cup coconut or maple sugar 2/3 cup dairy free chocolate chips 1 tsp vanilla extract 1/4 tsp almond extract (optional) pinch salt INSTRUCTIONS In a medium saucepan, whisk together cocoa powder, arrowroot, and sugar. Pour in the coconut and almond milk and whisk to combine. Bring to a bubble over medium heat, stirring regularly. The mixture will slowly thicken as it comes to a low boil. Whisk it for about 2 minutes after it starts bubbling. You’ll feel it thicken. Remove from the heat and stir in chocolate chips, vanilla, almond (if using), and salt. Whisk until smooth. Thai ⁣pineapple fried rice : @woon.heng - Recipe (serves 2-3)⁣ Ingredients:⁣ ~ 2 cups cooked Jasmine rice (used rice cooker)⁣ ~ 1/2 cup of each: dry roasted cashew, fresh pineapple chunks, pan fried tofu, broccoli stems⁣ ~ 1 small carrots - diced⁣ ~ 1 small onion - sliced⁣ ~ 3 cloves garlic - minced⁣ ~ 1 tablespoon sliced ⁣jalapeño ~ oil, salt to taste⁣ Sauce (mix together): 1.5 tablespoons 'fish' sauce (recipe on highlights) & 1.5 tablespoons soy sauce/liquid amino⁣ ✔️In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, & carrot until soft. Then, add broccoli stems, tofu, rice and sauce. Stir continuously until all rice are well coated with sauce. ✔️Finally, add cashews, pineapple, jalapeño and season well. Super easy and quick for any meal of the day. You can add other green veggies as well. Serve warm with some Thai basil. Few tips to get fluffy rice:⁣ - When you cook your rice, use a little less water than requested. I have always used my rice cooker, and my finger to gauge the water needed. - Let rice cool down first. Chili pan mee with homemade noodles & tofu crumbles! by @woon.heng Follow @vegancanteen for more awesome vegan recipes! #vegancanteen Recipe: (serves 4):⁣ Noodle ingredients:⁣ ~ 2 cups all purpose flour, 3 tablespoons aquafaba, 1/4 cup + 2 tablespoons ice cold water, 1/4 tsp salt⁣ ✔️Place all ingredients in a bowl & knead (with hand) until a dough forms (mixer works too). Cover with damp paper towel & let rest for 30 minutes. Divide dough into 4 equal parts. Using a pasta machine, run one dough through a dough thinner a few times, then change settings to cut. Cut dough into long noodles & coat noodles well with flour to prevent sticking. Boil a pot of water with a pinch of salt & cook noodles until al dente about 3 minutes. Homemade noodles has shorter cooking time.⁣ ⁣Tofu crumbles:⁣ ~ 1 pack of firm tofu (drained, pat dry, mashed)⁣, 3 caps of mushrooms (soaked until soft and sliced)⁣ ~ 5 cloves garlic (minced), 3-4 shallots (minced)⁣ ~ oil and additional salt if needed⁣ Sauce: 1.5 tablespoon soy sauce, 1.5 tablespoons stir fry sauce, 2 teaspoons dark soy sauce, 2 teaspoons sugar, 1 teaspoon salt⁣ ✔️In a heated non-stick pan, dry tofu crumbles until lightly brown, then add 1 teaspoon oil &continue to cook until tofu looks chewy/spongy, push aside. Add another teaspoon oil & sauté mushrooms until cook. Then, add shallots, garlic & cook until fragrant. Add sauce & continue to stir until tofu absorbs all the sauce. ⁣ ⁣Garnish: Blanched yu choy/bok choy, fried shallots, chili crisp ⁣ How to serve: Mix noodles with few spoonfuls of tofu, and top with garnishes. Serve warm and Enjoy!

Orecchiette with a Tomato ‘Meat’ Sauce by @thefoodietakesflight Via @vegangotgame #vegangotgame Orecchiette with a Tomato ‘Meat’ Sauce Serves 2-3 people _ 200 g dried orecchiette (2 cups), or pasta of choice 1/2 cup TVP (textures vegetable protein), vegan mince, or minced cooked mushrooms*  1 1/2 tbsp olive oil  1 large onion, diced 2 cloves garlic, minced 1 1/2 cup tomato sauce 2 tsp fresh basil plus more for garnishing  1 1/2 tsp salt, or to taste** *Note: I used 1/4 cup dried TVP and soaked it in hot water to yield 1/2 cup **The salt with depend on the seasoning of your tomato sauce since some are already white flavorful _ Steps 1. Cook the pasta until al dente. 2. While the pasta is cooking, heat a pan with the oil. Sauté the onions. Add in the vegan mince or minced mushrooms and cook for another 2-3 minutes until lightly browned. Add in the tomato sauce, dried basil, and leave to boil over medium heat.  3. Add in the salt and season to taste. Add in the orecchiette and mix well until pasta has absorbed some of the sauce, ‪around 4-5‬ minutes. Turn off heat, garnish with some basil, and enjoy while hot!

Check out the recipe: ​ What you'll need: The buffalo sauce: 1/2 cup hot sauce, 3 tbl refined coconut oil, 1 tbl sugar ( I used coconut), 2 tsp apple cider vinegar, 1/2 tsp oregano The filling: 1 cup frozen corn, 1 cup frozen cauliflower rice, 1 can black beans rinsed and drained, 2 green onions finely chopped, 1/4 cup vegan blue cheese, 2 cups shredded vegan cheese, 8 count (8 in)flour tortillas.What you do: 1️⃣ Spread corn & cauliflower rice on parchment lined baking sheet season with salt/ pepper as desired, bake at 400 F for 20 min shaking pan half way through 2️⃣While veggies are roasting, make buffalo sauce, whisk together all ingredients until oil has melted and well combined over low heat. Set aside 3️⃣In a large bowl combine green onions, black beans, roasted veggies, and 1/4 cup buffalo sauce ( the left over sauce will be for dipping) 4️⃣ Time to make the quesadillas: On 1/2 Of the tortilla, in layers add shredded cheese, 1/4 Cup filling, 1 tbl blue cheese dressing, and more cheese, fold over the empty side of the tortilla onto the layers & press down to seal 5️⃣ On a nonstick pan over medium heat, cook quesadilla until bottom is golden & crisp about 3 min, then flip to the other side, cook another 2-3 min . Repeat. You should have about 8 quesadillas. I cut mine and served them with the left over buffalo sauce for dipping.
