Nut-free Vegan Mac n Cheese This popular recipe is so simple and sooo delicious!⠀ ⠀ Credit @alexafuelednaturally⠀ ⠀ Recipe⠀ Serves 4-6 ⠀ INGREDIENTS ⠀ Vegan cheese sauce:⠀ 2 cups potatoes, peeled and chopped *I used Yukon gold*⠀ 2 cup carrots, peeled and chopped⠀ 1 can (15.5 ounce) great northern beans (aka white beans) rinsed and drained ⠀ 3/4 cup unsweetened plain, unsweetened soy milk or water ⠀ 5 tbsp nutritional yeast⠀ 1 tbsp lemon juice⠀ 1 tsp salt⠀ 1/2 tsp garlic powder⠀ 1/2 tsp onion powder⠀ ⠀ Other ingredients:⠀ 1 pound dried pasta, I used shell pasta but feel free to use gluten⠀ free *Reserve 1/2 cup hot pasta water*⠀ 2 tbsp vegan butter, optional but i highly recommend (I use either⠀ earth balance or miyokos)⠀ 2 tbsp nutritional yeast⠀ ⠀ Method:⠀ 1.Boil or steam the potatoes and carrots in a large pot for about 20 minutes or until soft. ⠀ 2.In the meantime cook the pasta according to package directions. ⠀ 3.Meanwhile place all the vegan cheese ingredients in a blender (including the cooked potatoes and carrots) and blend until smooth. Taste the sauce and adjust ingredients as needed. ⠀ 4.Once the pasta is cooked, carefully spoon out about 1/2 cup hot pasta water into a cup and set aside. Then drain the pasta and return to pot. Add the vegan cheese sauce to the cooked pasta noddles, mix to combine, if the sauce seems to thick, this is when you can add some of the hot pasta water to loosen up the sauce. * If you’re using gluten free noodles, skip the pasta water and instead use regular hot water.*⠀ 5.Then add an additional 2 tablespoons of nutritional yeast, salt, pepper and 2 tbsp vegan butter (the vegan butter is optional) . ⠀ 6.For leftovers… to reheat it, add a little bit of plant based milk & or vegan butter if the sauce is too thick.

A big bowl of nourishment by @cookingforpeanuts We've got beans, baked sweet potato, roasted corn, and air-frier plantains with mashed avocado! Step-by-step instructions below: Recipe Beans: Cook 1 chopped onion (small dice) in a little vegetable broth or sauté in olive oil until translucent, about 7 minutes. Add 3 minced garlic cloves and cook another minute. Mix in 1 tbsp tomato paste. Add 3 cups cooked black beans, 1 tbsp vegan Worcestershire sauce, 1 tbsp Dijon mustard, 1 tsp maple syrup and 1 tsp sriracha. Add desired amount of vegetable broth or bean liquid and simmer about 10 minutes, adding more liquid as needed. Salt and black pepper to taste. Sweet potato: prick sweet potato all over with fork. Bake on lined sheet at 400F until thickest part of potato is easily pierced with fork. Once cool, slice open with a knife and add tahini and red chili flakes. Corn: use tongs to hold end of corn and turn slowly over gas flame on stove until evenly charred. (Brush vegan butter or olive oil on corn after cooking, squeeze lime and chili powder if desired.) Plantains: slice very ripe plantain into about 1-1/4 inch pieces. (Optional: brush lightly with olive oil.) Cook in air fryer or oven at 400F until lightly browned. Serve with mashed avocado and chili flakes. To make the shiitake bacon, preheat your oven (350F), shiitake mushrooms, de-stem and thinly slice fresh coat them with olive or coconut oil and add a little liquid smoke (optional), sea salt, a drizzle of maple syrup and smoked paprika. . Add the cubed potatoes and the chopped onion. Cook them for about 5-6 minutes or until the potato cubes are soft. Drain the water and add the veggies to a blender along with all the other ingredients. Blend until smooth and transfer the sauce back to the saucepan. Bring it to a boil for just a second and mix in any tomato sauce you like ⠀ I mixed the cream sauce with 350ml of vegan bolognese which was the perfect amount for 500g of pasta.

Simple and easy crispy baked smashed potatoes topped with vegan pesto Via @plantbased_food_and_travel Recipe: For the smashed potatoes: 1 kg small potatoes. Olive oil. Sea salt. Toppings of your choice. . Instructions: Bring water to a boil, add the cleaned potatoes and cook them for about 25-30 minutes until they are soft (knife/fork test). . Preheat the oven to 220 degrees celcius, put the cooked potatoes on a baking tray, smash them down with a potato masher or simply a bowl, add a drizzle of olive oil and a pinch of sea salt on the top of each potato and bake them for about 30 minutes until crispy and lightly browned. Put them on a plate and top with whatever you want!
