To be honest, this wasn’t the sweetest or juiciest watermelon, but I made a plan- I got out my blender and made a watermelon and mint juice (well smoothie technically hehe)! I was really happy with this plan because the below average watermelon transformed into sweet, minty watermelon juice! I know the watermelon struggle is sometimes so real and you never know which one is gonna be a goodie- so I thought I’d share this idea! The recipe is down below!
RECIPE:
(Makes about a cup)
- 2 1/2 cups watermelon cubes
- 3 large mint leaves

Vegan spreadable cheese recipe! Great for those who are also lactose intolerant

SPREADABLE CHEESE:
3/4 c water
1 ½ tsp Agar powder
1/2 c additional water
1/2 c raw cashews
1 (2 oz) jar pimentos
1/2 tsp paprika
1 1/4 tsp sea salt
1/2 tsp onion powder
1/4 tsp garlic powder
2 T nutritional yeast flakes
1 T lemon juice
Put 3/4 c of water in a small sauce pan. Bring to boil. Add 1 ½ tsp of Agar powder and stir well until it brings to a boil. Set it aside. In a blender, put ½ cup of additional water and remaining ingredients. Blend until very smooth. Add Agar mixture into a blender. Blend well. Transfer into an oil sprayed bread pan. Will thicken as it chills in a refrigerator for 1 1/2 hours. Mash and spread on bread and make sandwiches. Cook on oiled skillet until nice golden brown on both sides. Keep remaining cheese in a refrigerator. Enjoy!!

1 serving @explorecuisine edamame and mung bean fettuccine cooked per instructions
1/2 cup black beans
1/2 cup yellow corn
Spinach and cilantro
All the mini heirloom tomatoes
Pico de Gallo Drizzle of cashew cheese
Avocado
Harissa Roasted Carrots with toasted hazelnuts & pomegranate seeds by @crowded_kitchen Recipe: ⠀

Ingredients
12-15 medium carrots ⠀
2 tsp harissa spice blend⠀
1 tbsp olive oil⠀
2 tsp lime juice⠀
1 1/2 tsp agave⠀
Salt + pepper to taste ⠀
⠀
For serving: ⠀
Pumpkin Hummus (recipe below)⠀
Toasted hazelnuts: Spread 1/2 cup whole hazelnuts on a baking sheet and bake for 10 mins at 325. Remove from oven, let cool and chop.⠀
Pomegranate seeds⠀
Fresh parsley ⠀
⠀
Directions: ⠀
Preheat the oven to 400 F. ⠀
Wash carrots and trim greens (you can leave a bit at the top). Peel if desired. ⠀
Spread evenly on a baking sheet, then drizzle with olive oil, harissa, lime, agave, salt and pepper. Toss to coat. Roast for 25-30 minutes, or until carrots are tender and slightly browned. Let cool slightly, then serve over a bed of pumpkin hummus. Top with toasted chopped hazelnuts, fresh parsley and pomegranate seeds. ⠀

Pumpkin Sage Hummus:⠀
3 15 oz. cans chickpeas, drained but reserve 3/4 cup of liquid from can ⠀
3/4 cup aquafaba (liquid from can of chickpeas)⠀
1 cup tahini⠀
1/2 cup pureed pumpkin⠀
1/2 cup freshly squeezed lemon juice⠀
Zest of one lemon⠀
4 cloves minced garlic⠀
1 tbsp sage⠀
1 tsp salt ⠀
1/3 cup olive oil ⠀
⠀
Directions: ⠀
Add all ingredients to high speed blender and blend on high for up to 5 minutes. You may need to pause a few times to scrape down sides. ⠀
Blend until hummus reaches desired consistency. If for some reason the hummus is too dry, add more reserved chickpea liquid in 1 tbsp intervals until you reach a creamy consistency. Serve with a drizzle of olive oil, paprika, fresh sage and pomegranate seeds (optional). Enjoy!

- 2 frozen bananas,
- 1/2 glass frozen mango
- 1/2 frozen dragon fruit
- few strawberries
- 1 scoop of @sunwarriortribe protein powder

- 1/2 glass coconut milk
- berries for the top.
