Tomato & Pea Frittata Fingers These tasty frittata fingers make a great finger food breakfast or lunch for toddlers and older kids too. You can change up the ingredients depending on what you have at home!
INGREDIENTS
* 4 large eggs
* 50g grated cheese
* 1 tbsp plain flour
* 50g frozen peas
* 1/2 red pepper, finely chopped
* 0.5 tsp dried herbs
* 6 cherry tomatoes, halved
INSTRUCTIONS
* Preheat the oven to 180c and line an 8×8 inch dish with parchment paper.
* Crack the eggs into a jug and beat lightly with a fork.
* Add the grated cheese and flour and mix again.
* Add the frozen peas, red pepper and herbs and mix one last time.
* Pour the egg mixture into the baking dish and bake in the oven for 10 minutes.
* Remove from the oven and place the cherry tomatoes on top, lightly pressing down into the frittata.
* Return to the oven for a further 10 minutes.
* Allow to cool for a few minutes before lifting the frittata out by the parchment paper and then cutting into six fingers or twelve smaller bites.

I saw a recipe for potato and chive waffles by @whatiateforbreakfast which looked like a great option for little ones - firm and crispy around the edges making them easy to hold, but soft and fluffy in the middle making them easy to chew...so this recipe is inspired by that delicious dish.

The ingredients I used were...
- mashed potato (with no added extras like milk or butter, just plain old potato which had been mashed)
- grated cheese
- an egg, beaten
- breadcrumbs
- vegetables, cooked and chopped (I used broccoli and kale)
- red pesto
.
To make...
- mix all the ingredients together
- shape into flat rounds on a well greased tray
(I spooned the mix into a cookie cutter and pushed it flat with my finger to get a consistent shape)
- spray or brush with a little oil
- bake at 180’C for 15 minutes or until starting to get crisp and golden
- carefully turn them over using a spatula / fish slice (spray or brush with a little more oil if required)
- bake for a further 5 minutes until golden and crisp on both sides

Eat fresh from the oven, refrigerate or freeze, warming through again before serving. (To reheat after refrigerating I briefly panfried the potato cakes in a lightly greased frying pan to give them their slightly crispy outer coating again, but you could also grill or oven bake. You could even microwave but that wouldn’t give a crispy coating)

100g cooked chickpeas⠀
40g grated carrot⠀
30g baby spinach, roughly chopped⠀
2 eggs⠀
100g self raising flour⠀
150 ml milk⠀
1 – 2 tbsp sweet chilli sauce⠀
40g parmesan cheese , grated⠀

Put the chickpeas into a food processor . Whiz for a few seconds until roughly chopped. .
Add the remaining ingredients. Whiz for 2 to 3 seconds until finely chopped and blended .⠀
Heat a little sunflower oil in a frying pan . Add a large tablespoons of mixture into the pan. Fry for 2 to 3 minutes each side until golden and cooked through .⠀. MAKES 10 TO 12 PANCAKES⠀

WEANING
When Sophia first started weaning I was so worried she weren’t taking to food but wow now when I look back at the early stages I think I couldn’t be more wrong! I just needed to relax and go with the flow of Sophia, now she loves anything and everything
We’ve been following the BLW weaning style, Sophia loves being independent with feeding herself. However I always find jars SO easy to take with us when we go out.
So @hipporganicuk have sent us some jars and porridge to try. I love trying new tastes with Sophia! She has had the porridge for a few mornings for breakfast now and as soon as she tried it the “mmmm” noises started, she definitely enjoyed it!
Not only that but who know @hipporganicuk do bath products!! I had no idea!
