2) Take small amounts of the mixture, form into balls or finger shapes and roll in the desiccated coconut. ⠀⠀⠀⠀⠀

Fancy something a little different for your brekkie tomorrow morning? How about these raspberry eggy bread roll ups! Soft pieces of bread soaked in egg, rolled up with a delicious raspberry “jam” filling. I served these for my Nina with greek yoghurt for dipping, scrambled egg and some fresh fruit. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
What would you dunk yours in? I have to admit I got out the choccy sauce for my portion

Ingredients: (makes four) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 4 slices of bread ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• Approx 10 Raspberries ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 teaspoons of chia seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method; ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1) Crush the Raspberries using the back of a fork in a small bowl. Add the chia seeds, stir and set aside. ⠀⠀⠀⠀⠀
2) Cut the crusts off each slice of bread. Then using a rolling pin, roll out each slice till they’re as flat as you can get. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3) Whisk the egg into a medium sized flat bowl. ⠀⠀⠀⠀⠀⠀
4) Spread each piece of bread with a teaspoon amount of jam going edge to edge. Roll up and dunk in the egg making sure it’s all covered, including each end. ⠀⠀⠀⠀⠀⠀
5) Add to a medium hot frying pan with a little oil (seam side down first) and fry on each side for a minute, don’t forget to quickly stand up on each end too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Did you know that today is international hummus day? Strange I know - but there’s hummus involved, so I’m all for it!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
I have been serving these sweetcorn and spinach fritters to Nina ever since she was 6 months old. Packed full of veg, and so delicious from the corn sweetness. They take just 15 minutes to make and can be kept in the fridge for a couple of days or frozen for up to 6 months. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Do you often freeze left over food, or do you tend to eat your left overs the next day? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients - For the fritters; ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 200g of tinned sweetcorn, drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 100g of wilted spinach, I used frozen which I defrosted in the microwave (squeeze out some of the moisture before adding to the blender pot) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 100g of self- raising flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 medium eggs (you can sub for flax eggs to make this dish #vegan - 2 tablespoons of ground flax seeds and 5 tablespoons of water) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 60ml of milk (any milk will work) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 teaspoon of baking powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the hummus; ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• A 400g tin of chickpeas, drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 clove of garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 2 teaspoons of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• The juice of one lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• Good grinding of black pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 tablespoon of tahini ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• (add a little dash of water to the mix if you prefer a looser consistency) ⠀⠀⠀⠀⠀⠀⠀⠀⠀

1) Place the oats in a food processor, and blend till you reach fine breadcrumbs. ⠀⠀⠀⠀⠀⠀⠀⠀
2) Add the rest of the ingredients and whizz till all combined. ⠀⠀⠀⠀⠀⠀⠀⠀
3) Tip out onto your work surface, and bring the dough together with your hands, this will be really easy. ⠀⠀⠀⠀⠀⠀
4) Flatten out to approx 1.5cm thickness with your hands and cut into 10 strips. ⠀⠀⠀⠀⠀⠀⠀⠀
5) Take each piece of mixture and form into long biscuits with rounded corners. ⠀⠀⠀⠀⠀⠀⠀⠀
6) Place onto a non-stick baking tray (or a lined one) and bake at 170d/ 350f for 20-30 minutes flipping half way through. Completely cool before serving to baby. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients (Serves 3 large portions) ⠀⠀⠀⠀⠀
• 250g of macaroni pasta (any pasta shape will work) ⠀⠀⠀
• 7 blocks of frozen spinach. You can use fresh but you’ll need to finely chop the leaves and add to the sauce in the pan, rather than in the microwave) ⠀⠀⠀⠀⠀⠀
• 500ml of whole milk (or plant based alternative) ⠀⠀⠀⠀⠀
• 100g of cheddar cheese (nutritional yeast can be replaced here) ⠀⠀⠀⠀⠀
• A good grinding of black pepper ⠀⠀⠀⠀⠀
• 1 tablespoon of coconut oil - I used @coconutmerchant (or butter) ⠀⠀⠀⠀⠀
• 2 tablespoons of corn flour (plain flour can also be used but I find corn flour gives a smoother consistency) ⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method; ⠀⠀⠀⠀
1) Get your pasta on to boil. ⠀⠀⠀⠀⠀
2) To a microwaveable jug, add the spinach and milk. Cook for 3 minutes so the spinach is nearly defrosted and the milk slightly warmed. Meanwhile grate your cheese. ⠀⠀⠀
3) In a hot pan, add the coconut oil and the corn flour. Stir and cook for a minute and then add the spinach milk. ⠀⠀⠀
4) Stir till starting to thicken, add the black pepper and cheese and keep stirring till you have a nice thick sauce. ⠀
5) Add the cooked pasta to the sauce, stir and serve with an extra grating of cheese on top. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

This meal is suitable from 6 months. For young babies, you can either cut up the pasta into smaller bits or use a larger pasta shape like fusilli. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
❄️ The sauce will freeze very well. Freeze in small portions and serve with freshly cooked pasta once thawed and reheated. ⠀⠀
