Follow @mylowcarbmeal for daily recipes! - IMAGE: Shoutout to @yourketobestfriend for this awesomeness ❤️ She also has a YouTube account with videos of her recipes! - ️ INGREDIENTS Fathead crust: 1 1/2 cup almond flour 1 tsp baking powder 2 1/2 cup shredded mozzarella cheese 2 oz cream cheese 2 large eggs 1 tsp Splenda (I would replace with erythritol) Filling: 1 1/2 cup farmers cheese or more mozzarella 1 1/2 cup shredded mozzarella 1 1/2 feta cheese - 4 eggs + 1 for wash Butter - ‍ INSTRUCTIONS 1. Preheat oven to 425F(210C) 2. Combine the almond flour, shredded mozzarella, and cubed cream cheese in a large bowl. Microwave for two minutes, stirring halfway through. 3. Stir again at the end until well incorporated. Stir the baking powder, Splenda, and eggs into the melted cheese mixture. 4. Working quickly while the cheese is still hot, knead with your hands until a dough forms. 5. Combine your filling ingredients - except egg. 6. Cut your fathead dough into four pieces and roll out like you're making pizza. Then bring the ends together on each side to form a sort of boat shape and pinch together. Sprinkle in cheese filling. 7. Beat an egg with a fork and wash the edges of the crust. Bake about 8-10 minutes, or until cheese is beginning to bubble. 8. Remove from the oven and make a well in the hot cheese with a spoon. Carefully crack an egg into the center of each boat, top with a dot of butter. Return to the oven for about five minutes, the egg should be just set - it will finish cooking outside the oven. 9. Cool for a few minutes. 10. Garnish with parsley or hot pepper flakes. Cold Veggie Vegan Pizza —— Compliments of my mama! But I know how to make it.... —— For the base: - 3C all purpose flour - 1/2 tsp salt - 1 tsp instant yeast - 1 1/2C cold water - 3 Tbsp olive oil • Combine all ingredient together in kitchen aid or bosh machine for approximately 10 minutes. Set aside. -Let it rise for 30 minutes (you can wait a more couple hours and it will actually rise more, but I don’t have time for that, and it rises in the oven anyways). -Bake at 350 degrees for 15-20 mins. *I use half whole wheat and half white flour. —— Once you have finished baking the base, let it cool then add your vegan cheese. KETO CREAMY GARLIC BUTTER TUSCAN SALMON Follow @mylowcarbmeal for a daily load of low carb/keto recipes. ‍♂️ Tag a friend who needs to try this! - - ️Ingredients 4 salmon fillets, skin off (or Trout or any white fish) Salt and pepper, to season 2 teaspoons olive oil 2 tablespoons butter 6 cloves garlic, finely diced 1 small yellow onion, diced 1/3 cup dry white wine (OPTIONAL) -- (do not use a sweet white wine) 5 ounces (150 g) jarred sun-dried tomato strips in oil, drained of oil 1 3/4 cups heavy cream Salt and pepper, to taste 3 cups baby spinach leaves 1/2 cup fresh grated Parmesan cheese, (do not include for dairy free option) 1 teaspoon almond flour mixed with 1 tablespoon of water (optional)** 1 tablespoon fresh parsley chopped - ‍Instructions 1. Heat the oil in a large skillet over medium-high heat. Season the salmon filets (or fish if using) on both sides with salt and pepper, and sear in the hot pan, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once cooked, remove from the pan and set aside. 2. Melt the butter in the remaining juices leftover in the pan. Add in the garlic and fry until fragrant (about one minute). Fry the onion in the butter, and allow to reduce down slightly. Add the sun-dried tomatoes and fry for 1-2 minutes to release their flavors. 3. Reduce heat to low heat, add the heavy cream, and bring to a gentle simmer, while stirring occasionally — season with salt and pepper to your taste. 4. Add in the spinach leaves and allow to wilt in the sauce, and add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. (For a thicker sauce, combine the almond flour mixture to the center of the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens.) 5. BOLOGNESE STUFFED ZUCCHINI BOATS - Follow @mylowcarbmeal for more daily recipes! - INGREDIENTS: - For Bolognese Sauce 200 g / 7 oz ground meat (I use a mixture of pork and beef) 2 small onions (1 big) finely chopped 80 g / 3 oz carrots finely chopped 400 g / 14 oz tomatoes finely chopped (I use the one from the can) 3 dl / 10 fl oz homemade broth (I always have some in my freezer divided into bags) Olive oil, salt, pepper - For Zucchini Boats 5 medium-sized zucchini 100 g / 3,5 oz grated mozzarella Fresh parsley, salt, pepper - ‍ INSTRUCTIONS: In a skillet preheat olive oil. Add minced onion and carrots and while constantly stirring, cook around 3 minutes. Add the ground meat, sprinkle it with salt and pepper and cook until it’s no longer pink. Add chopped tomatoes and 1/4 cup broth and cook under a lid until the broth is absorbed. Continue adding broth until the liquid is absorbed and the bolognese is al dente, that will take about 30 minutes. Meanwhile, your bolognese is cooking, you wash and cut the zucchini lengthwise and by using a spoon, scoop out the flesh. (I put the zucchini meat in the bolognese mixture). Fill each zucchini half with some of the bolognese mix and bake it for 12 minutes (or more if you want the zucchini more well done) and for the last five minutes top it with shredded mozzarella. This is the exact recipe you need if you want a tasty, very easy and quick meal for the whole family. - ️ INGREDIENTS 1 Zucchini, grated and cried out 1 Carrot (big), peeled and grated 400g/ 14oz Pumpkin, peeled and grated 1 Onion, thinly diced 2 Garlic cloves, pressed 1 tbsp Chia seeds 100g/ 3,5oz flaxseed meal 2 eggs, beaten and whisked Salt & pepper Butter for pan frying - - ‍ INSTRUCTIONS 1. In a big bowl mix grated vegetables and eggs. 2. Add chia seeds and flaxseed meal, salt, and pepper, and mix again until compact. 3. In a non-stick pan preheat butter and turn the heat to low. 4. Create flat patties of the desired size and one after another fry them on both sides. Per side around 3 minutes or until slightly brown as on the picture. 5. Eat - EXTRA TIP! I also tried once to stir fry the vegetables before mixing them with all ingredients. I prefer the vegetable al dente and little crispy, so I won't do it again. I have to get back to the topic because it seems there are more people out there having the same issues. - Keto diet is nowadays a big trend among people who want to get rid of excess pounds. Some people have massive results directly from the start and others not. After all, this happens in every diet. It is also super confusing for beginners seeing all the fancy and tempting meals passing through social networks. One might think this is how the "diet" looks like. But keep on mind that most people post attractive dishes. If I start to post fish with green salad and olive oil every day, I have probably no followers left by the end of the week - So here are a few reasons, why you might not lose weight (not including any health issues which need to be discussed with a doctor): 1. Even this diet is (in my opinion) the most generous of all. Unfortunately also here the only thing which counts is (by all hated) principle of energy income and outcome. If you want to reduce weight, your energy income has to be smaller!! 2. Is related to the first point - To make sure you don't overdo your daily calories intake. Leave out all the bulletproof coffees and creamers, try to avoid bacon with every meal Eat simple meals consisting out of meat/fish, lot of green veggies and a source of good fats (olive oil, few nuts, avocado). If we want our body to get rid of our fat, we have to stop overloading it with foreign fat. 3. Also, you need to be patient. Starting a diet and hoping to lose all the excess pounds in two weeks is a sweet dream, but that isn't how it works. Each body responds differently to change. And that can take time (even months). If you miss your pasta, and you are a fan of lasagna, you will love this recipe. The cabbage is the best pasta substitute even it is hard to believe at first. My biggest reward is when my small kids eat everything without a word - this was this case. If I have told them, that they're eating cabbage, they would probably never trust me again - ️ INGREDIENTS- 1 cabbage 500 g/ 17,5 oz mixed pork/beef 1 onion, finely minced 2 garlic cloves, finely minced 2 tbsp fresh parsley, finely chopped 2 tbsp tomato paste 800 g/ 28 oz chopped can tomatoes Salt & pepper 150 g/ 5,3 oz grated mozzarella cheese Olive oil & butter - ‍ INSTRUCTIONS 1. Parboil leaves in salted boiling water for 5-10 minutes. Drain and remove excess water with a towel, and divide the cabbage into single leaves. 2. Heat the olive oil in a large non-stick pan, fry the minced meat in it and add the chopped onions and the parsley. (5 minutes) 3. Add the garlic slices and tomato paste and fry for 2 minutes. 4. Add the canned tomatoes, salt, and pepper. Cook the sauce for at least half an hour with the pot open. 5. Place a layer of cooked cabbage leaves in a buttered oven dish. Spread some bolognese ragù on top. So fill the mold layer by layer. 6. Sprinkle thickly with grated cheese, place butter flakes on top. 7.
