Gluten free lemon cupcakes filled with homemade curd Who wants the recipe? There’s in the sponge, in the flufffy buttercream and of course... curd! They’re simply the zest... (sorry) Here’s a question that you MUST answer honestly: are you a ‘scrape all or most of the icing off of cakes’ kinda person or a ‘if the icing is there, I’ll eat it’ kinda person? ✅❌ I’ve never been a big fan of thick fondant icing on birthday cakes so you’ll often find a plate of icing after I’ve had a slice!! Oops! . What are your best/worse (or both) gluten free eating out experiences? Id say one of my most memorable positive experiences has to be at @pizzaintrevi in Rome When I said I was gf, they removed the cutlery and glass at the table and brought special gf cutlery and a glass over I’ve never experienced that anywhere ever! My worst is probably when me and a few gluten free friends placed our order and the waitress said ‘hope you have your epi-pens ready’ and walked off Now that’s something I haven’t experienced again either and I hope I never do!!! Actually to be honest worse than that is when a few years back I was given a ‘gluten free’ main course to then be told when I had eaten half of it that it wasn’t gluten free at all... I was unwell for days Has anyone sadly had that at a restaurant before?

10 Minute Curry (full recipe below) the response to my stories earlier when I asked for feedback on those that have tried my recipes has been so overwhelming and has got me a little emotional, I am not going to lie! I still can’t believe how many of you are loving the recipes and from someone who literally has zero chef training or skills I just love to cook and share my journey so thank you to everyone who has trusted me and tried one! This curry was mentioned A LOT as one of the fan favs so I thought I would share it again as it’s also one of my favs to make when short on time. — Makes 4 portions — Ingredients: ▪️2 tbsp olive oil or coconut oil ▪️3 garlic cloves crushed ▪️1 red onion roughly diced ▪️1 tsp paprika ▪️1/2 tsp cayenne pepper ▪️1/2 tsp ground coriander ▪️Pinch of chilli flakes ▪️2 tbsp tomato puree ▪️2 cans chickpeas 400g x2 ▪️200 ml veg stock ▪️1 can coconut milk ▪️1/2 cup ground almonds 60g ▪️200g spinach — 1️⃣Heat a large pot on a medium heat with olive oil/coconut oil and crushed garlic
2️⃣Meanwhile roughly dice the red onion and add to the pot to cook down for a minute
3️⃣Add all the spices and tomato puree and stir
4️⃣Now add the chickpeas, coconut milk, veg stock and cook on a medium/high heat for 5 minutes making sure to stir
5️⃣Add the ground almonds and stir. Allow to cook down for a further 2-3 minutes
6️⃣Finally take off the heat and stir through the spinach until wilted

It can be frustrating to be surrounded by people who don’t understand what you’re going through. ⠀⠀ Everyone comes from different walks of life. The prevalence of Celiac Disease worldwide is approximately 1% (or 1 in 100 people). Your experience with how you’re managing Celiac Disease by being on a gluten free lifestyle can greatly vary based on your environment. ⠀⠀ Do you have a support system? ⠀⠀ Do you live in a country where there is regulations around the term “gluten free”? ⠀⠀ Do you live in a place where gluten free products are available? ⠀⠀ Often times, it’s easy to think that gluten free products or 100% restaurants might be available everywhere because you live in an area where you have access to them. ⠀⠀ But that’s not the case. Even in the U.S. (where I reside) there’s rural areas where there aren’t major grocery store chains. Odds are you’ll find a hard time finding gluten free products here. And I am sure there’s at least 1 person being impacted by this. ⠀⠀ You don’t even have to go that far out though. There’s also food desserts (places where there’s no major grocery stores except for convenience stores) all around the United States, which highlights disparities that people face everyday. ⠀⠀ What does this have to do with anything? Celiac Disease is an autoimmune disorder. And it can impact ANYONE regardless of age, gender, race/ethnicity, and/or socioeconomic status. ⠀⠀ The only way to manage it is by leading a gluten free lifestyle. But the difficulty of that managing that can greatly vary from person to person depending on so many circumsrances. ⠀⠀ Some people will have to overcome more barriers than others to lead a gluten free lifestyle. ⠀⠀ They’ll have to figure out how to be gluten free in a shared kitchen. ⠀⠀ You’ll have to learn how to navigate social situations while living with an autoimmune disorder. ⠀⠀ And all of this may not necessarily be easy to do day in and day out depending on all these circumstances. ⠀⠀ what kind of barriere are you facing or have faced while leading a gluten free lifestyle? —————————— #celiacsimplified

(ad) Who here can sum up being gluten free in one word? (no swearing if poss ) My word would probably be ‘frustrating’ 99% of the time!! But fortunately, when I’m at home, it’s one of the only places where being gluten free isn’t so frustrating ✅ It’s my safe zone! I mean where else can I enjoy a large helping of gluten free trifle with a glass of @shloer_official Spritzed?! (Anyone fancy my gf trifle recipe btw? Let me know!) Shloer is gluten free/ok for vegans and has no artificial colours or flavourings FYI You can find it in Sainsbury’s, Asda and Waitrose and in two other flavours - Bitter Orange and Bitter Lemon & Lime. . Anyone else struggle with going over to eat at friends and family’s houses? ‍♀️ What are your tips for making sure you’re safe eating there? Depending on how well I know someone, I can feel so incredibly awkward trawling through the ingredients and packaging of everything they’ve used!! ‍♀️ Usually I survive by bringing over my own gf gravy, vinegar etc which helps massively! Does anyone else’s family/friends really get your gluten free requirements? I'd love to hear some stories of positive experiences too! #ShloerSpritzed

THYROID SURGERY + SCARS: Warning... don’t swipe across if you’re squeamish Hands up who else has a scar on display!? ‍♀️ I wanted to share this photo by @sophiemayanne taken as part of @behindthescars_ - I had these photos taken over a year ago for this incredible project, but it’s taken me that long to write my entire thyroid surgery story out and publish it! Swipe across to see WHY I have this scar - the result of a subtotal thyroidectomy in 2010!! I have a bit of a love/hate relationship with my scar. Sometimes I like the fact it tells a story, or that @thereformcoach calls it my second smile. But it always seems to be there as a reminder that I’m still suffering issues with my thyroid and sometimes it makes me feel like the surgery I had 10 years ago was all for nothing. I’m still on a bit of an epic journey to fix (what is left of) my thyroid after surgery 10 years ago, but I hope I can spread a bit of positivity to anyone suffering that you’re not alone! Wear your scars proudly as they’re a battle scar from what you’ve been through. Gluten free no-bake ‘Crunchie’ honeycomb cheesecake ✅✅ Who fancies the recipe? Anyone want me to make a dairy free version? ‍♀ Let me know! (I’m feeling determined )Your reward for making your own homemade honeycomb is that the filling will turn an epic golden colour (this happened totally by accident btw ) I was expecting this to be a totally white cheesecake with honeycomb chunks in it... but now I think it looks better this way!! What do you think ‍♀?! . How old were you when you realised you couldn’t eat gluten? I was 18/19 and to be honest, I now feel quite grateful that I had 18 whole years of eating whatever I wanted! (not sure how much I appreciated it at the time though!! ‍♀) I know a lot of people reading this will have been gf since a reeeeally young age and... that really sucks!! (although I guess the earlier you know the better plus you are use to it somewhat) I was quite fussy as a kid and now I regret it as I can eat so little these days! . Thanks for the insane amount of messages I received on my story yesterday, they are still coming right now. I was talking about all these horrible itchy, painful lumps/bumps I get on my fingers. Does anyone else get them and if so, do you know what they are or if they might be linked to anything? x
