3 large shallots, finely chopped
8 cloves garlic, minced
1 tsp dried thyme
1 tsp Italian seasoning
8 ounces crimini mushrooms, roughly chopped
8 ounces white mushrooms, roughly chopped
8 ounces shiitake mushrooms, stems removed and chopped
1.5 cups long grain white rice, thoroughly rinsed
2.5 cups low sodium chicken stock, or water
1/3 cup dry sherry, or dry white wine
1 tsp salt, plus more to taste
0.5 tsp freshly ground black pepper
Fresh thyme, to garnish
slivered almonds, to garnish
