Today’s lovely textured loaf was made using my usual master recipe with 350g strong white bread flour plus 150g emmer flour...and it tastes lovely...emmer, sometimes known as farro, is a lovely ancient grain, in fact it is one of the earliest cultivated grains; it benefits from being mixed with a stronger flour to give it some support, and adds lovely extra goodness and flavour to your loaf...

My first attempt of making 50% #semolinasourdough
Silky, creamy and absolutely light texture. Same short 4 hours bulk. Recipe:⬇️⬇️⬇️✔️150g bread flour(50%)
✔️150g semolina flour(50%)
✔️220 g water(73.3%)+ 3g (1%)ice cold water extra added along with salt
✔️65g levain(21.6%)
✔️6 g salt(2%)
✔️6 g honey( 2%) optional 8 am feed starter 1:7:7 (5g starter:35g flour: 35g water) temp 78F 4 pm same day mix bread flour + semolina with water( autolyse 2 hours)
6 pm add starter( 65gr) to the dough( starter was on its peak), mix (stand mixer on low speed for 1 min)
6.30 pm add salt, honey and 3g of ice cold water mix ( stand mixer on low speed for 1 min.) 7pm stretch and fold on the wet table.
7.30 pm, 8.15 pm,9pm, 3 stretches and folds, leave dough untouched for 40 min. Dough rises 30-30%, Temp 80-82F 9.40 pm do preshaping 10 pm shaping. Leave shaped dough in the proofing basket for 15 min.
10.15 pm put the dough to retard in the fridge. next day oven 500 F , bake straight from the fridge ,with closed lid 15min, open the lid and bake at 450 F for 20 min. Enjoy
