You guys probably saw on the menus in many restaurants “Bowls” option. So what is that and how to make it delicious? Basically, in plant based diet we love variety of food and color on one plate :) But not all vegan food goes well together :) so basically you want a presence of grains, legumes, veggies, greens and nuts/seeds on your plate. Creamy Vegan Polenta with Mushrooms and Spinach

Recipe:⠀
Ingredients
Polenta (Basic Recipe):⠀
1 cup polenta (150 g)⠀
3/4 cup full-fat coconut milk (200 ml)⠀
1 1/4 cup vegetable broth (300 ml)⠀
2-3 tbsp nutritional yeast flakes or vegan parmesan cheese (optional)⠀
⠀
Mushroom Spinach Topping:⠀
1 tbsp olive oil or coconut oil⠀
1 onion sliced⠀
7 oz mushrooms (200 g) sliced⠀
2 cloves garlic minced⠀
1-2 tbsp soy sauce⠀
2 cups spinach roughly chopped⠀
salt, black pepper to taste⠀
2-3 tbsp pine nuts (options see text above)⠀
⠀
Instructions⠀
Polenta:⠀
Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.⠀
Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.⠀
Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.)⠀
Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir (optional). Mushroom Spinach Topping:⠀
Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown.⠀
Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like.⠀
Toast pine nuts in a small pan without oil until lightly browned.⠀
Serve polenta with mushrooms, spinach and pine nuts. Enjoy!

When you can’t decide between cookies or brownies, make both.
Sunday baking with Soph and I am definitely carrying on the sweet bake theme. ♀️
A soft cookie dough layer, double stuff Oreo and a gooey layer of rich brownie batter - not forgetting the melted chocolate chunks sprinkled throughout so we are talking epic brookies.
Roughly they take around 45 minutes from start to finish so if you have some dark chocolate, flour and Oreos, pop the oven on and let’s get baking.
For the cookie dough layer you’ll need -
100grams dairy free spread
100grams caster sugar
100grams brown sugar
1/4 teaspoon salt
50mls soya milk
200grams self raising flour
1 teaspoon baking powder
70grams chocolate chips
Method -
To a large bowl add in the butter, both caster and brown sugar and salt. Slowly combine the mixture until smooth. Now pour in the soya milk, self raising flour and baking powder bring this altogether until a dough is formed. Sprinkle in the chocolate chips and give the mixture one last stir. Transfer to a lined baking tray and place on 9 double stuff Oreos (or Oreo flavor of your choice), set aside.
Now it’s onto the brownie batter and for this you’ll need -
100grams of butter
170grams of caster sugar
80grams of plain flour
6 tablespoons of aquafaba
55grams of cocoa powder
1 tsp of baking powder
160mls of plant milk
Method
In a large bowl sieve your flour, cocoa powder and baking powder and combine well. In a separate bowl cream together the butter and sugar, slowly adding in the aquafaba and pour in the plant milk. Transfer this into the dry ingredients and mix for roughly 2-3 minutes until smooth. Pour the brownie mix over the cookie dough layer, top with a few crushed Oreos and bake in the oven and around 170’c for 25-30 minutes.
Once baked, cut to your desired size and Ta dah! Gooey Oreo brookies. The perfect sweet bite for when you fancy something different or just want two sweet foods combined.
