I stopped eating meat a few weeks ago. I feel amazing inside and out. . Now, I want to be clear. This is not a self-righteous post about why I am better than you for not eating meat right now. . I simply want to say that my body told me it didn’t like what I was putting into it and I decided to be open-minded, listen to it and try something new. . In 2008 I was diagnosed by a doctor with an autoimmune disorder Systemic Lupus Erythematosus. Lupus for short. . (I’m looking forward to sharing more about my healing journey with Lupus in future posts.) . At the time I was diagnosed, I was living a really unhealthy lifestyle. I was treating myself with disrespect by putting things into my body that my mind liked but my body didn’t. . During that period, I’d receive both subtle and obvious warning signs, but I ignored them. Finally my body said stop. . The body is amazing like that. If you can tune in, it has all the answers. . For ten years I’ve been exploring, learning and experimenting with the connection between food and healing. . It hasn’t been an easy exploration. . I struggled with restrictive diets. . I’d feel too restricted, rebel and then eat something and feel the affects of it immediately or the next day. . Making certain changes with your food can be expensive and time consuming. . I miss certain foods that used to give me a lot of emotional comfort. . When my exploration took me to Dr. Brooke Goldner @goodbyelupus I was shocked and intrigued to hear her claims and read her case studies on curing lupus with a raw vegan diet. . So I checked in with myself and made a decision to try shifting my eating even further than I have. . Today my healing journey has taken me to a plant-based diet and the decision feels careful and respectful. . What I love about healing journeys is that they are unique and customized. . Inflammation is a process in the body that is meant to repair damaged tissues and heal injuries. It is a necessary process which allows us to recover from stressors like exercise, injury, and fight off certain diseases. However, it is important to confine inflammatory processes to only the injured area and when the body is constantly inflamed throughout (systemic), this can cause many problems- so it is important to minimize inflammation in the absence of injury. • Long-term Inflammation is the key driver of almost all chronic diseases. This can be seen as a result of chronic stress, unhealthy environment/lifestyle, and a poor diet. Ways to keep systemic inflammation to a minimum include getting proper rest, reducing emotional stress, and eating a healthy anti-inflammatory diet. • Although everyone is different and we all react to foods differently, these are some general guidelines of which foods are more and less likely to cause inflammation in the body. Some foods, like omega-3 fats, actually work to lower & balance inflammation in the body. Tangy Turkey Ranch Club Wraps { The most SIMPLE meals are often the tastiest & most overlooked! Keep it simple & fresh this weekend! } . makes 4 servings Ingredients: 4 large sprouted or whole wheat tortillas 12 ounces leftover turkey breast, sliced or shredded a few large handfuls of green leaf lettuce 2 Roma tomatoes, sliced 4 strips nitrate free bacon, cooked and crumbled Homemade Ranch: 1/2 cup Greek yogurt 1 clove fresh garlic, minced 1 Tbsp finely chopped yellow onion 2 Tbsp finely chopped chives 1 tsp dijon mustard 1/2 tsp apple cider vinegar sea salt and fresh ground black pepper, to taste Instructions: In a small bowl add all the ranch ingredients and whisk well to combine. Layer each tortilla on a cutting board and spread over about 2 Tablespoons of the homemade ranch onto each. Top with lettuce, tomato slices, turkey and crumbled bacon equally. Coconut Mango Smoothie I’ve been on such a smoothie kick recently because of the weather warming up ☀️ but also because it’s an easy on the go and quick nutrient dense meal AND it’s the perfect way to get my dark leafy greens in anyone else struggle with this?!‍♀️ • • • Dark leafy greens are SO beneficial for your health because they are packed with vitamins and minerals, help with gut & skin health, and aid in detoxification oh, and the fiber content can help get those bowels moving • • • Kale is considered to be one of the most nutrient dense veggies so it would be awesome if you could get that in at minimum! I love the @costco organic power greens pack I get because it’s an AWESOME bulk price and I get a good variety of greens (kale, spinach, chard, etc). The benefit of the variety is that each is higher in different nutrients. For example, kale is higher in vitamin C and spinach is higher in iron! • • • So here you go - here is another fun variation to try from my other Banana Avo smoothie for 1 serving mix together: 1/2 cup ice, 1/2 banana, 1/2 cup mango, 1 T coconut flakes, 1.5-2 cups leafy greens of choice, 1/2 to 3/4 cup almond milk (your preference of thickness) and 1 serving of protein powder of choice (I use Biotics Vanilla Protein which is a GAME CHANGER it’s so good.
